Zucchini Gratin

Preheat the oven to 400 degrees F
- 6 tablespoons (3/4 stick) unsalted butter, plus extra for topping
- 1 pound yellow onions, cut in 1/2 and sliced (3 large)
- 2 pounds zucchini, sliced 1/4-inch thick (4 zucchini)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- 1 cup hot milk
- 3/4 cup fresh bread crumbs
- 3/4 cup grated Gruyere
Chinese Pork Fried Rice Recipe

In a large skillet, saute the pork, carrot, broccoli, peas and onion in butter until pork is no longer pink
- 1 boneless pork loin chop (6 ounces), cut into 1/2-inch pieces
- 1/4 cup finely chopped carrot
- 1/4 cup chopped fresh broccoli
- 1/4 cup frozen peas
- 1 green onion, chopped
- 1 tablespoon butter
- 1 egg, lightly beaten
- 1 cup cold cooked long grain rice
- 4-1/2 teaspoons reduced-sodium soy sauce
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground ginger
Macaroni & Cheese Lite

First made 10/28/2007. Lighter version with plenty of flavor,
- 8 ounces whole wheat rotini pasta (2-1/2 cups)
- 4 tsp. cornstarch
- 2 cups low-fat (1%) milk
- 1/2 tsp. Dijon mustard
- Salt and pepper
- 4 ounces reduced-fat (2%) process cheese spread, cut into 1/2 inch cubes
- 2 ounces extra-sharp Cheddar cheese, shredded
- 1/3 cup freshly grated Pecorino Romano cheese
- 2 T. plain dried bread crumbs
- 1 medium tomato, thinly sliced
Grilled Pork Tenderloin Satay Recipe

In a small saucepan, bring the first eight ingredients to a boil
- 1 small onion, chopped
- 1/4 cup packed brown sugar
- 1/4 cup water
- 3 tablespoons reduced-sodium soy sauce
- 2 tablespoons reduced-fat creamy peanut butter
- 4-1/2 teaspoons canola oil
- 2 garlic cloves, minced
- 1/4 teaspoon ground ginger
- 1 pork tenderloin (1 pound)
Crispy Onion Chicken Recipe

- 1/2 cup butter, melted
- 1 T. Worcestershire sauce
- 1 tsp. ground mustard
- 1/2 tsp garlic salt
- 1/4 tsp. pepper
- 1 can ( 6 ounces) cheddar or original French-fried onions, crushed, divided
- 4 boneless skinless chicken breast halves ( 4 ounces each).
M&M Cookies

First made 12/10/2013-Excellent **Dough must be chilled for 1 hour or overnight before baking cookies
- 1 cup (2 sticks) butter
- 2/3 cup brown sugar
- 2/3 cup sugar
- 1 egg
- 1-1/2 tsp vanilla
- 2 cups flour
- 1-1/4 tsp. baking soda
- 1 tsp. salt
- 1-3/4 cups M&M's Milk Chocolate Candies (can mix in dark chocolate M&M's too).
Pumpkin Bread

Nothing beats a toasted warm slice of this Pumpkin Bread with a little butter
- Optional:
- 1 2/3 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 tsp. ground nutmeg
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1 cup canned pumpkin
- 1/2 cup canola oil
- 1/2 cup water
- 1/2 cup walnuts, chopped
- 1/2 cup raisins, optional
- Coconut
- Candied ginger or cinnamon chips
Macaroni and Cheese

Excellent, worth the effort
- 1/2 pound elbow macaroni, large size
- 4 T. (1/2 stick ) butter
- 1/2 cup fresh bread crumbs
- 3 cups whole or low fat milk ( 1% or 2 % work fine)
- 1/4 cup all purpose flour
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground pepper
- 10 ounces sharp white Cheddar cheese, coarsely grated (about 2-1/2 cups)
- 4-5 ounces Gruyere cheese, coarsely grated ( about 1 cup)
- 2 ounces dry Jack, ( I use monterey jack) finely grated ( about 1/4 cup).
Croque Monsieur Mac and Cheese

- 2 cups milk
- 2 cups coarsely grated gruyere cheese (about 6 ounces)
- 1 cup finely grated parmesan cheese (about 4 ounces)

- 2 T.unsalted butter, plus more for greasing

- 1 clove garlic, minced
- 3 T. all-purpose flour
- 1/8 tsp. grated nutmeg
