Snickerdoodle Ice Cream Sandwiches

Preheat oven to 350. Slice cookie dough 1/4" thick; arrange slices 2" apart on ungreased cookie sheets
- 1 (16.5oz) roll refrigerated sugar cookie dough
- 1 tbsp. sugar
- 1 tsp. ground cinnamon
- 1 (1.75qt) container vanilla ice cream
- 2 c. cornflakes, coarsely crushed
Fruit Nectar

- 1/2 c. raspberries, fresh or thawed from frozen
- 1 orange, peeled & sectioned
- 1 nectarine, pitted & sliced
Tortellini Tuscan Stew

Combine all ingredients, except tortellini, spinach, and parm in a 5 qt slow cooker
- (peeled & seeded, cut into 1" chunks)
- 2 lb butternut squash
- 1 lg zucchini
- 1 lg yellow summer squash
- 1 lg diced onion
- 1 lg diced red bell pepper
- 4 oz thin green beans, trimmed & cut into 2" lengths
- 1 can 28 oz crushed tomatoes
- 1 can 14 oz chx broth
- 2 tbsp fresh oregano
- 1 1/2 tsp garlic, chopped
- 3/4 tsp salt
- 1 pkg fresh cheese tortellini
- 1 bag 5 oz baby spinach
- 3 tbsp grated parm

- 4 med. red potatoes, cut into 1/4" slices
- 1 bag, 8-9oz baby spinach
- 2 tbsp. melted butter
- 1/4 tsp. salt, divided
- 1/8 tsp. pepper, divided
- 1/2 c. whipping cream
- pinch nutmeg
- 1/2 c. grated Parm cheese
Cauliflower and Crab Chowder

In a large saucepan combine cauliflower, broth, bell pepper, and lemon peel
- 2 c. cauliflower flowerets
- 1 (14.7 oz) can chicken broth
- 1/2 c. chopped red pepper
- 1 1/2 tsp. finely shredded lemon peel
- 1 1/2 c. fat free half and half or milk
- 3 tbsp. flour
- 1 pkg. imitation crab flakes
- 2 tbsp. chopped fresh dill weed (optional)
Artichoke/ Bean Dip

Preheat oven to 350. Puree white beans & lemon juice in food processor till smooth
- 1 can white kidney beans
- 1 tsp. fresh lemon juice
- 1 can artichoke hearts
- 1 c. shredded light swiss or monterey jack cheese
- 1/2 c. grated parm
- 1/3 c. light mayo
- 2 tsp. minced garlic
- 1 tsp. worcestershire sauce
- 3-4 dashes hot pepper sauce
- 1/4 tsp. fresh ground black pepper
- 4 slices bacon, cooked & crumbled
- 2 tbsp. chopped green onions
Sage Onion Quiche

In a large skillet, saute onions in butter till tender; drain
- 2 lg. onion, thinly sliced
- 2 tbsp. butter
- 2 tbsp. minced fresh sage
- 1 tsp. minced fresh thyme or 1/4 tsp. dried
- 1 unbaked 9" pastry shell
- 1 c. shredded cheddar cheese
- 4 eggs
- 1 can evaporated milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. ground nutmeg

- 2 c. unbleached flour
- 2 c. sugar

- 2 tsp. sugar
- s&p to taste
- 1 1/3 c. cooked elbow macaroni noodles
- 2 oz. cheddar cheese, grated
- 2 tsp. dehyrated onion flakes
- 2 tbsp. chopped pimento
- 1/4 c. diced green pepper
- lettuce leaves
- 2 hard boiled eggs, quartered
