Chipotle Lime Corn on the Cob

Carefully peel back corn husks to within 1" of bottoms; remove silk
- 6 lg. ears sweet corn in husks
- 1/2 c. mayo
- 1 chipotle pepper in adobo sauce, finely chopped
- 2 tbsp. minced fresh cilantro
- 2 tbsp. lime juice
- 1 1/2 tsp. grated lime peel
- 1 garlic clove, minced
- 1/2 c. grated Asiago cheese
BLT's w/ Avocado and Spicy Mayo

Chop the crushed garlic w/ salt and press it with the side of the knife till mashed
- 1 lg. garlic clove, crushed
- 1/2 tsp. salt
- 2 tsp. chili powder
- 2 1/2 tbsp. fresh lime juice
- 1/2 c. mayo
- 1 -12oz pkg. center-cut bacon
- 8 slices white bread
- 1 lg. or 2 sm. avocados
- 2 med. tomatoes, thinly sliced
- 8 lettuce leaves, torn into pcs.

Cheesy Chicken Enchiladas

- 1/4 c. (1/2 stick) butter
- 1 c. chopped onion
- 2 cloves garlic, minced
- 1/4 c. flour
- 1 c. chicken broth
- 4 oz. cream cheese, softened
- 2 c. (8 oz) shredded cheese blend, divided
- 1 c. shredded cooked chicken
- 1 can (7 oz) diced mild green chiles, drained
- 1/2 c. diced pimientos
- 6 (8") tortillas, warmed
- 1/4 c. chopped fresh cilantro
- 3/4 c. salsa

- 1 can condensed cream of mushroom soup, undiluted
- 1/2 c. finely chopped onion
- 1/2 c. chopped celery

Crustless Salmon & Broccoli Quiche

- 3 eggs or 3/4 c. cholesterol-free egg substitute
- 1/4 c. chopped green onion
- 1/4 c. plain yogurt
- 2 tsp. flour
- 1 tsp. dried basil
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 3/4 c. broccoli florets
- 1/3 c. (3oz) drained & flaked water-packed boneless skinless canned salmon
- 2 tbsp. grated Parmesan cheese
- 1 plum tomato, thinly sliced
- 1/4 c. fresh bread crumbs

- 2 c. fresh pea pods or 6 oz. frozen pea pods

- 2 cloves, minced

- TOPPING
- 1 (11 1/4oz) jar lemon curd (about 1 cup)

- 2 c. cherry tomatoes, quartered
- 1 can (14oz) chickpeas, drained & rinsed

- 1/3 c. chopped pitted kalamata olives
- 5 oz. feta cheese, crumbled.
