Sage Onion Quiche

Ingredients
- 2 lg. onion, thinly sliced
- 2 tbsp. butter
- 2 tbsp. minced fresh sage
- 1 tsp. minced fresh thyme or 1/4 tsp. dried
- 1 unbaked 9" pastry shell
- 1 c. shredded cheddar cheese
- 4 eggs
- 1 can evaporated milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. ground nutmeg

Preparation
Step 1
In a large skillet, saute onions in butter till tender; drain. Stir in sage and thyme. Spoon into pastry shell. Sprinkle w/ cheese. In a bowl, wish the eggs, milk, salt, pepper, and nutmeg. Pour over cheese
Bake at 425 for 15 mins. Reduce heat to 375; bake 20-2 mins. longer or till knife inserted in center comes out clean. Let stand for 10 mins. before cutting.
