Italian Rainbow Cookies

1. Preheat Oven to 350 degrees
- 7 oz almond paste
- 3/4 cup sugar
- 1/2 tsp almond extract
- 3/4 cup butter (room temperature)
- 3 eggs
- 1 cup flour
- 1/4 tsp salt
- 15 drops of green food coloring
- 15 drops of red food coloring
- 2/3 cup apricot or raspberry preserves
- 4 oz semi-sweet chocolate
- 1 tsp shortening/Crisco
Mexican Chili Dip

Spread in the above order and serve with chips
- 3 cans Frito bean dip
- 1 pt. sour cream & package of taco seasoning (mixed together)
- Chop 3 avocados and mix with 1 can of chopped chili peppers
- 3/4 lb. shredded Monterey jack cheese
- 2 bunches scallions (chopped), mixed with 4 coarsely chopped & seeded tomatoes
Bordelaise Sauce

Combine ingredients Reduce over a low heat Strain into 1 cup quick brown sauce Add 1 tbsp
- 1 cup red wine
- 1/4 cup shallots
- 1 tsp thyme.
Guacamole

Mix ingredients together in bowl
- 2 ripe avocados
- 1/2 red onion; minced (about 1/2 a cup)
- 1-2 Serrano chilies, stems and seeds removed
- 2 tbsp. cilantro leaves, finely chopped
- 1 tbsp. fresh lime juice
- 1/2 tsp salt
- Dash of black pepper
- 1/2 ripe tomato, seeds and pulp removed
Apple Pie Dip & With Cinnamon Pita Chips

1. Combine all the dip ingredients in a small pan except the cornstarch-water mixture
- ● 2 cups peeled, cored, and diced apples
- ● 2 tbsp. lemon juice
- ● 3 tbsp. brown sugar
- ● 1/4 tsp cinnamon
- ● 1 tsp cornstarch dissolved in 1 tsp water

1. Melt the butter in the microwave
- 1/2 cup unsalted butter
- 1/4 cup brown sugar
- 1 cup sugar, divided
- 1 teaspoon vanilla extract
- 6 Tablespoons pumpkin puree
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 teaspoons ground cinnamon, divided
- 1 teaspoon pumpkin pie spice
- 1/2 cup white chocolate chips
Red Velvet Trifle

1. Prepare red velvet cake mix according to back of box 2
- 1 box red velvet cake mix, and ingredients on box
- 1/2 cup half and half
- 1 cup dark chocolate chips
- 8 ounces mascarpone cheese
- 4 ounces cream cheese
- 1/3 cup sugar
- 2 cups heavy whipping cream
Marinade for Chicken, Fish or Pork

- o 1/2 oil

- o 2 tbsp honey
- o 1/4 tsp salt
- o 1 tsp black pepper

- 1 3/4 cups chopped strawberries
