Chicken Tortilla Soup

Slow Cooker
- 2 1/2 (14.5 oz) cans low-sodium chicken broth (4 1/2 cups)
- 1 (14.5 oz) can petite diced tomatoes
- 3/4 cup finely chopped yellow onion
- 4 cloves garlic, pressed through a garlic crusher
- 2 1/2 tsp chili powder
- 1 1/2 tsp ground cumin
- 3/4 tsp paprika
- 1/2 tsp ground coriander
- Salt and freshly ground black pepper, to taste
- 1 1/2 lbs boneless skinless chicken breasts
- 1 (14.5 oz) can black beans, drained and rinsed
- 1 1/2 cups frozen corn
- 1 Tbsp fresh lime juice
- 1/4 cup chopped fresh cilantro
Pesche (Italian Peach Cookies)

1. Preheat oven to 350 degrees 2
- For Cookies:
- o 1 cup of sugar
- o 1 cup of vegetable oil
- o 1 tablespoon of baking powder
- o 4 large eggs
- o 4 cups of flour
- For Filling:
- o 1 small jar of peach or apricot preserves
- o 1 tablespoon or more to taste of peach brandy or apricot brandy
- o 25 shelled almonds with skin on.
- Frosting:
- o 1 cup sugar - add as needed
- o 1 cup of grenadine - add as needed
- o 1 cup of peach or apricot
- o brandy leaves and cloves for garnish or spearmint (optional)
Pumpkin Angel Food Cake Bars

- CAKE:
- 1 box Angel Food Cake Mix
- 1 (16-ounces) canned pumpkin
- 1 teaspoon pumpkin pie spice
- GLAZE:
- 3/4 cup sifted powdered sugar
- 1 1/2 tablespoon hot water
- 1 teaspoon vanilla extract
- 1/4 teaspoon pumpkin pie spice
Sweet and Tangy Grilled Chicken Marinade

Marinate chicken for at least 30 minutes
- ● 1/4 cup cider vinegar
- ● 3 Tbsp. prepared Dijon mustard
- ● 3 cloves garlic, minced
- ● 3 Tbsp. lime juice
- ● 4 1/2 tsp lemon juice
- ● 1/2 cup brown sugar
- ● 1/2 tsps. salt
- ● 1/4 tsp black pepper
- ● 3 Tbsp. olive oil
- ● 6 skinless, boneless chicken breast halves
Shrimp Marinade

Marinate shrimp for at least 30 minutes before cooking
- ● 4 to 5 Tbs. olive oil
- ● 4 garlic cloves, finely minced
- ● 1 tsp. red pepper flakes
- ● 1 tsp. sweet paprika
- ● 1 lb. medium shrimp, peeled and deveined
- ● 1 to 2 Tbs. fresh lemon juice
- ● 1 to 2 Tbs. dry white wine
- ● salt and freshly ground black pepper, to taste
- ● 2 Tbs. chopped fresh parsley

- 1 yellow onion, finely chopped
- 4 celery ribs, diced
- 3 carrots or 12 mini carrots, diced
- 2 red bell peppers, diced
- 2 medium russet potatoes, peeled and diced
- 1 – 14.5 ounce can diced tomatoes
- 1/2 cup fresh flat-leaf Italian parsley
- 5 garlic cloves, chopped, I use my garlic press
- Kosher salt and black pepper, to taste
- 1/2 lb. ditalini pasta
Grilled Shrimp with Roasted Garlic-Cilantro Sauce

1. Preheat your oven to 400 degrees F
- 1.5 lb uncooked prawns
- Salt and pepper
- Olive oil
- 1 small head garlic, top trimmed off
- 1 cup chopped fresh cilantro leaves
- 1 lime, juice of
- 1 tbsp dry white wine
- 3 tbsp olive oil
- 2 tbsp chili sauce (or 1 tbsp dry chili flakes)
Bacon Bourbon Meatballs

1. Place the uncooked bacon into a food processor and process for about 1 minute or until bacon is finely ground up
- 6 bacon strips
- 1/2 medium yellow onion
- 1 lb ground beef
- 1/2 cup breadcrumbs

- 2 eggs
- 1 3/4 cup pastry flour

- 3/4 cup milk
- 2 tsp. vanilla
- 1/2 cup blueberry puree (recipe below)
- 2 cups blueberries
