Blueberry Zucchini Muffins

1. Preheat oven to 350 degrees F
- 1 1/2 cups white whole wheat flour or whole wheat pastry flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup shredded zucchini (about 1 medium zucchini)
- 1/2 cup pure maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2 tablespoons olive oil
- 1/3 cup unsweetened applesauce
- 1 egg
- 1/4 cup unsweetened almond milk (any milk will work)
- 3/4 cup fresh or frozen blueberries
Pumpkin Cheesecake Dip

S'Mores Stuffed Cookies

1. Mix together flour, salt, cinnamon, baking soda and baking powder
- 2 1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 6 - 7 sheets (about 1 cup) of honey graham crackers
- 1 1/2 teaspoon cinnamon
- 1 cup butter, room temperature
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2/3 cup chocolate chips
- 1/2 cup roughly chopped milk chocolate
- 2 cups mini marshmallows
Southwest Turkey Burger

1. In a very large bowl combine all the ingredients for the turkey patties with your hands
- 1 Small Onion, chopped
- 2 lb. Ground Turkey
- 1 Can Black Beans, drained and rinsed
- 1 Cup Bell Pepper, finely chopped
- 1 Cup Panko Bread Crumbs
- 2 Eggs
- 1/4 Cup Cilantro, chopped
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Cumin
- 1 Tablespoon Southwest Chipotle
- 1 Teaspoon Paprika
- 1/2 Teaspoon Chili Powder
- Salt and Pepper to taste

- 2 teaspoons freshly-squeezed lemon juice
- 2 teaspoons lemon zest (about the zest of 1 lemon)
