Chocolate Raspberry Mousse Cake

1. Prepare your pan. You need a 9-inch pan with sides at least 3 inches tall, and the ability to remove the bottom
- For the Brownie Layer:
- 3 1/3 oz (3/4 cup) all-purpose flour
- 2 oz (2/3 cup) unsweetened cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 4 oz unsalted butter
- 7 3/4 oz (1 cup +2 tbsp) granulated sugar
- 2 large eggs, at room temperature
- 2 tsp vanilla extract
- For the Chocolate Mousse:
- 9 oz semi-sweet chocolate, finely chopped
- 1 3/4 cups heavy cream, divided use
- Pinch salt
- 2 tsp unflavored powdered gelatin
- 2 tbsp water
- For the Raspberry Mousse:
- 1 1/2 cups fresh raspberries
- 9 oz white chocolate, finely chopped
- 1 1/2 cups heavy cream, divided use
- Pinch salt
- 2 tsp unflavored powdered gelatin
- 2 tbsp water
- Pink food coloring, optional
- For the Vanilla Mousse:
- 9 oz white chocolate, finely chopped
- 1 1/2 cups heavy cream, divided use
- 4 tbsp honey
- Pinch salt
- 2 tsp unflavored powdered gelatin
- 2 tbsp water
- 2 tsp vanilla bean paste (can substitute vanilla extract)
- To Finish:
- 4 oz semi-sweet chocolate, finely chopped
- 4 oz heavy cream
- 1 pint fresh raspberries
- Chocolate curls or other decorations
Pistachio Squares

● Mix butter, flour and nuts
- ● 1 stick butter
- ● 1&1/4 cups of flour
- ● 1/2 cup chopped nuts
- ● 8 oz. cream cheese
- ● 1 cup confectioners’ sugar
- ● 1/2 container of cool whip
- ● 2 pkg of pistachio pudding
- ● 1 cups of milk
Pork Lo Mein

1. Cook pasta as directed on package
- 8 oz. uncooked angel hair pasta
- 1 (1 lb.) pork tenderloin
- 1 (1 lb.) bag frozen vegetables (stir-fry mix)
- 1 cup teriyaki sauce
- 1/4 tsp ground ginger
Panko Crusted Honey Mustard Salmon

1. Preheat oven to 400 degrees
- 4 (6 oz.) salmon fillets
- 1 1/2 Tbsp. Dijon mustard
- 1 1/2 Tbsp. honey
- 1 clove garlic minced
- 3/4 cup Panko bread crumbs
- 2 Tbsp. chopped fresh parsley
- 1 tsp lemon zest
- 2 Tbsp. olive oil
- Salt and freshly ground black pepper
Island Chicken Marinade

In a large saucepan, heat the oils over medium heat
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons coconut oil
- 1 large onion, peeled and chopped
- 2 tablespoons chopped garlic
- 1/3 cup packed dark brown sugar
- 1 1/2 teaspoon ground allspice
- 3/4 teaspoon dry thyme
- 3/4 teaspoon black pepper
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- Pinch cayenne
- 1/2 cup reduced-sodium soy sauce or tamari
- 1/2 cup red-wine vinegar

Cherry cookies, with maraschino cherries are wrapped around cherry cordial Kiss candies and then baked
- 1/2 cup butter, softened
- 1 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon almond extract
- 2 cups flour
- 1/2 cup chopped maraschino cherries, well drained and patted dry
- Hershey’s cherry cordial kisses or dark chocolate kisses
- Powdered sugar
Salmon with Thai Marinade

- 2 tbsp. minced garlic
- 4 cup fresh basil
- 3 tbsp. EVOO
- 2 cups half and half
- 1/4 cup grated cheese
- 4 tbsp. butter
- Salt and pepper to taste
