Mom’s Barbecued Beef

Mix all and pour over roast
- 1 medium onion, chopped
- 1 T. chili powder
- 1 (14 oz.) bottle ketchup
- 1/3 c. firmly packed brown sugar
- 1 t. Worcestershire sauce
- 1 c. water
- 1/2 t. garlic powder
- 1 5-7# beef roast
Creamed Peas and Potatoes

Place potatoes in a saucepan; cover with water and cook until tender

- 1 package (10 ounces) frozen peas
- 1 t. sugar
- 1 T. margarine
- 2 T. all-purpose flour
- 1/4 t. white pepper
- 1 1/2 c. skim milk
- 2 T. minced fresh dill
Eggplant Cutlets

Preheat oven to 350. Grease a 10 X 15 inch sheet panwith nonstick spray
- 1 very large eggplant, cut into 12 half-inch slices
- Batter
- 1 c. mayo
- 1 T. red curry pate
- Mix well and set aside.

- 6 c. panko bread crubs
- 1/2 nutritional yeast flakes
- 2 T. onion powder
- 1/2 t garlic powder
- salt to taste
- Combine.

- 1 pint cherry tomatoes, halved
- 1/2 Vidalia onion, very thinly sliced
- 2 tablespoons chopped fresh parsley leaves

- 1 tablespoon olive oil
- Salt and freshly ground black pepper
Qabili Palau Recipe (Afghan Rice with Lamb, Carrots and Raisins)

Rinse the rice three times, soak in warm water, and then set aside for at least 45 minutes
- 3 cups Afghan rice (Ahu Barah brand)
- 1 1/2 lb chopped lamb, approximately 10 pieces
- 2 large yellow onions, peeled and quartered
- 1/2 cup olive oil or vegetable oil
- 5 tsp. salt
- 1 bag shredded carrots
- 1 cup raisins
- 3/4 cup water
- 2 tsp. cumin
- 1 1/2 tsp. cardamom
- 1/2 tsp. cinnamon
- 1/2 tsp. black pepper
- 12 cups water
- 1/4 tsp. turmeric
- Garlic to taste, chopped
Baked Parmesan Zucchini

Preheat oven to 350 degrees F
- 4 zucchini, quartered lengthwise
- 1/2 cup grated Parmesan
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoon chopped fresh parsley leaves
Sour Cherry Jam (Jennie's)

Prepare your canning jars by cleaning them in very hot, soapy water
- 2 quarts (about 1 1/3 kilo) sour cherries, pitted
- scant 3 1/2 cups (685 grams) granulated natural cane sugar
- Lemon rind cut from 1/2 a lemon, with the white pith intact
Potato Salad (from Cook's Corner)

Boil the potatoes until slightly tender
- 5 pounds red skin potatoes
- 1 cup mayonnaise
- 1 cup Miracle Whip
- 1 small jar of dill pickle relish
- 1 small jar of green olives sliced (reserve juice for later)
- Chopped onion (optional, to taste)
- Chopped celery (optional, to taste)
CHICKEN CURRY WITH COCONUT MILK

1. Heat oil in a wide pan and add the sliced onions
- 250 gm of cleaned and cubed chicken pieces
- 1 cup of sliced onions
- 2 tbsp of oil (I use coconut oil)
- 1/2 tsp of turmeric powder
- 1 tsp of cumin powder
- 2 tsp of coriander powder
- 1/2 tsp of red chilli powder
- 1 " piece of ginger
- 2 green chillies (adjust to taste)
- 2 flakes of garlic
- A few cubes of ripe tomato
- 1 tbsp of poppy seeds, soaked for 15 mins (see notes)
- 2 cups of thin coconut milk (see notes)
- 1 cup of thick coconut milk
- A small bunch of chopped coriander leaves, for garnish
