Morning Glory Muffins

In a large bowl, combine the first five ingredients
- 2 1/2 c. all purpose flour
- 1 1/4 c. sugar
- 3 tsp. ground cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt
- 3 eggs
- 3/4 c. applesauce
- 1/2 c. vegetable oil
- 1 tsp. vanilla extract
- 2 c. grated carrots
- 1 medium tart apple, peeled and grated
- 1 (8 oz. ) can crushed pineapple, drained
- 1/2 c. flaked coconut
- 1/2 c. raisins
- 1/2 c. chopped walnuts
Cinnamon-Sugar Pizza made with Crescent Rolls Sugar Crumb Crispies

Preheat oven to 400 degrees F Cut in butter to sugars, cinnamon, and salt and flour to form crumbs
- 1/4 cup butter *make sure butter is cold*
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- dash of salt
- 1/2 cup flour
- 1 can Pillsbury Cresent Rolls
Honey Bun Cake

Directions: Preheat oven to 350 degrees grease bottom only of 9 x 13 inch baking pan
- Ingredients:
- 1 – (18 oz) package white cake mix, (reserve 1/2 cup dry cake mix)
- 2 – sticks butter, softened
- 1 – cup plain Greek or plain yogurt
- 4 – eggs
- 1/2 - teaspoon vanilla extract
- Filling:
- 1/2 - cup reserved dry cake mix
- 1/2 - cup packed brown sugar
- 2 – teaspoons cinnamon
- 1/3 - cup chopped nuts, optional ( I do not use)
- Glaze:
- 3 - cups powdered sugar
- 1 - teaspoon vanilla extract
- 6 - 8 tablespoons milk
Authentic Italian Meatballs

Mix all ingredients in a large bowl by hand
- 1 lb ground beef
- 1 egg
- 1/4 cup milk
- 1/2 cup breadcrumbs
- 1/2 teaspoon salt
- 1 teaspoon oregano
- 1 tablespoon fresh parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon fresh ground pepper
- 1/4 cup grated parmesan cheese
Best Ever Green Bean Casserole

Preheat the oven to 475 degrees F
- For the topping:
- Ingredients
- 2 medium onions, thinly sliced
- 1/4 cup all-purpose flour
- 2 tablespoons panko bread crumbs
- 1 teaspoon kosher salt
- Nonstick cooking spray
- For beans and sauce:
- 2 tablespoons plus 1 teaspoon kosher salt, divided
- 1 pound fresh green beans, rinsed, trimmed and halved
- 2 tablespoons unsalted butter
- 12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
- 1/2 teaspoon freshly ground black pepper
- 2 cloves garlic, minced
- 1/4 teaspoon freshly ground nutmeg
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup half-and-half
Quinoa Black Bean Salad

Rinse the quinoa well in a sieve under cool running water
- 1/2 c. quinoa
- 1 cup Water
- 1 tablespoon Olive oil
- 4 teaspoons Lime juice (1/2 lime)
- 1/4 teaspoon Cumin
- 1/4 teaspoon Ground coriander
- 1 tablespoon Fresh cilantro; finely chopped
- 2 tablespoons Scallions; minced
- 1 can (15 oz size) Black beans; drained
- 2 cups Tomatoes, diced (optional)
- 1 cup Bell peppers; diced
- 2 teaspoons Fresh green chiles; minced
- 1 dash each salt and pepper; to taste
Chicken Tortilla Crockpot Soup

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker
- 1 pound shredded, cooked chicken
- 1 (15 ounce) can whole peeled tomatoes, mashed
- 1 (10 ounce) can enchilada sauce
- 1 medium onion, chopped
- 1 (4 ounce) can chopped green chile peppers
- 2 cloves garlic, minced
- 2 cups water
- 1 (14.5 ounce) can chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 (10 ounce) package frozen corn
- 1 tablespoon chopped cilantro
- 7 corn tortillas

- 1 lb chopped cauliflower (0.45 kg)
- (chopped into very small chunks)
- 1 small red onion, finely diced (optional)
- 1/2 lb bacon, fried and crumbled (0.2 kg)
- (about 7 slices)
- 2 cups grated Smoked Gouda, OR (500 mL)
- Cheddar cheese, divided
- 1 cup mayonnaise (250 mL)
- 1 cup sour cream (250 mL) OR greek yogurt
- Liquid sweetener (sucralose or stevia) to equal 1/2 cup sugar (125 mL)
- 1/2 tsp salt, OR to taste (2 mL)
