  • 2 c. grated carrots
  • 1 medium tart apple, peeled and grated
  • 1 (8 oz. ) can crushed pineapple, drained
  • 1/2 c. flaked coconut
  • 1/2 c. raisins
  • 1/2 c. chopped walnuts

  • 1/3 - cup chopped nuts, optional ( I do not use)
  • Glaze:
  • 3 - cups powdered sugar
  • 1 - teaspoon vanilla extract
  • 6 - 8 tablespoons milk
