Camping Meal

EAT
- For each person thinly slice (about 1/8 inch) 2 red potatoes and place in pie pan or on a big piece of foil.
- 2 . To make 6 Meat Patties- mix 1.5 pounds 85% lean ground beef, 2 eggs, 1 1/2 tsp. Dijon, 1 Tbsp. Worcestershire sauce, 1 tsp. salt and 1/2 tsp. pepper, and 1/2 cup finely chopped onions. Divide into 6 one inch thick patties.
- 3 . Top each pan of potatoes with a meat patty and sprinkle the potatoes generously with seasoned salt or garlic salt and pepper, then drizzle with a olive oil, especially over the potatoes.
- 4 . Cover with foil and bake at 400 degrees for 35-45 minutes or until potatoes are fork tender.
- 5 . Serve with BBQ Sauce, Ketchup, or HP Sauce.
Salmon Patties

In a mixing bowl, flake salmon with a fork and stir in green pepper, onion, mayonnaise, lemon juice and cayenne
- SALMON PATTIES
- 1 can Pink Salmon
- 1 green pepper, finely chopped
- 4 green onions, finely chopped
- 1/4 cup mayonnaise (OPTIONAL)
- 1 tablespoon freshly squeezed lemon juice
- pinch red cayenne pepper, to taste
- 1 large egg, lightly beaten
- 1/2 cup bread crumbs or crushed saltines
- 1/4 cup freshly chopped Italian parsley
- 1/2 teaspoon paprika
- 1/3 teaspoon garlic powder
- 4 tablespoons butter
Chicken Parmesan

Coat a saute pan with olive oil and place over medium heat
- Ingredients
- 1/4 cup extra-virgin olive oil, plus 3 tablespoons
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 bay leaves
- 1/2 cup kalamata olives, pitted
- 1/2 bunch fresh basil leaves
- 2 (28-ounce) cans whole peeled tomatoes, drained and hand-crushed
- Pinch sugar
- Kosher salt and freshly ground black pepper
- 4 skinless, boneless, chicken breasts (about 11/2 pounds)
- 1/2 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1 tablespoon water
- 1 cup dried bread crumbs
- 1 (8-ounce) ball fresh buffalo mozzarella, water drained
- Freshly grated Parmesan
- 1 pound spaghetti pasta, cooked al dente

Cream Cheese, together. Once combined add the meat and mix together
- 2 pounds cubed stew meat
- 2 cans Condensed Golden Mushroom Soup
- 1 largish onion diced
- 2-3 -4 tabls of Worcestershire (this stuff is so awesome I always add more)
- 1/2 water
- 8 oz of cream cheese (the first time I made this with just 1lb of meat I still added 8 oz's, sshh don't tell my lactose intolerant hubbie)
- couple of dashes of Garlic Salt (1 tsp?)
- couple dashes of Hot Paprika (see I just can't believe this would be good without some sort of kick)
Turkey Eggplant Parmesan

Preheat oven to 400. Peel eggplant and slice into 1/4 inch pieces
- Cycle 1
- 1 pound lean ground turkey breast
- 1 large eggplant
- 1 small onion
- 1 tablespoon olive oil to saute onion (can sub pan spray)

- garlic powder
- 2 cups low-carb marinara
- fat free parmesan (if you can find it – I use reduced fat)
- fat free mozzarella

Heat the oil in a large nonstick skillet over medium-high heat

- 2 onions, chopped
- 1 carrot, chopped
- 1 celery stalk, sliced
- 3/4 pound skinless boneless chicken breasts, trimmed of all visible fat and cut into strips
- 1 (14 1/2 ounce) can crushed tomatoes
- 1 T. chopped fresh basil or 1 t. dried

Whisk together the eggs, milk, sugar, and vanilla sugar (or vanilla) until creamy
- 6 eggs
- 1 1/2 cups milk
- 1/4 cup sugar (optional)
- 1 Tbsp. vanilla sugar (or 1 tsp. vanilla extract)
- 1/8 tsp. grated lemon zest
- 1 1/2 cups flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1/3 cup butter
- 1 cup cream, whipped until stiff peaks form
- Fresh fruit, fruit compote, or sautéed apples
Reese's Peanut Butter Rice Krispy Treats

Melt 4 Reese's peanut butter cups and 2 tablespoons of peanut butter in a pan with 3 tablespoons of butter
- Melt 4 Reese's peanut butter cups and 2 tablespoons of peanut butter in a pan with 3 tablespoons of butter. Fold in 3 cups rice krispies. Drop and cool on wax paper sheet or press into a buttered baking dish and when cool cut into squares.

Preheat barbecue grill to high
- 1 t coarse ground black pepper
- 1 ⁄2t salt
