Best Chocolate Sheet Cake Ever

- FOR THE CAKE:
- 2 cups Flour
- 2 cups Sugar
- 1/4 teaspoon Salt
- 4 Tablespoons (heaping) Cocoa
- 2 sticks Butter
- 1 cup Boiling Water
- 1/2 cup Buttermilk
- 2 whole Beaten Eggs
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla

- FOR FROSTING:
- 1/2 cup Finely Chopped Pecans
- 1-3/4 stick Butter
- 4 Tablespoons (heaping) Cocoa
- 6 Tablespoons Milk
- 1 teaspoon Vanilla
- 1 pound (minus 1/2 Cup) Powdered Sugar

Oreo Balls

1. Crush Oreos in food processor until fine and crumbly

- 1 package Oreos - you can get creative and use different kinds - mint Oreos are really good!
- 1 8 oz. box of cream cheese (if you use mint Oreos, you don’t have to use all the cream cheese)
- 1 package Kroger chocolate bark
Old-Fashioned Buttermilk Biscuits

Regular milk can be substituted for buttermilk
- 2 cups all-purpose flour (I used King Arthur White Whole Wheat, a whole grain, unrefined flour)
- 3 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon Kosher or sea salt
- 6 tablespoons cold unsalted butter, cut into small pats
- 1 cup low-fat buttermilk, plus additional for brushing on tops
Curried Lentils

Heat 1 T broth in medium soup pot
- 1 c. brown or green lentils, washed and drained
- 4 c. + 1 T. veg. Broth
- 1 med. onion, chopped
- 3 medium cloves garlic, chopped
- 2 med. carrots, diced into 1/4 inch pieces
- 2 med. celery stalks, diced into 1/4 inch pieces
- 2 c. finely chopped kale
- 2 t. curry powder
- 1 15 oz. can diced tomatoes ( do not drain)
- 3 T. chopped fresh cilantro
- salt and pepper to taste
Italian Anise Cookies With Icing and Sprinkles

- 2 teaspoons anise extract (or almond extract)

- 1/4 cup olive oil
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 tablespoon paprika
- 1 tablespoon garlic powder

In a bowl,combine the water and lemon juice
- 1 1/2 c. water
- 2 T. lemon juice
- 1 1/2 pounds cod fillets
- 1 small onion, finely chopped
- 2 large tomatoes, sliced
- 1/2 c. chopped green pepper
- 1/2 c. seasoned bread crumbs
- 1/4 c. grated parmesan cheese
- 1/2 t. dried basil
- 1 T. vegetable oil

Coat a saute pan with olive oil and place over medium heat

- 1/4 cup extra-virgin olive oil, plus 3 tablespoons
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 bay leaves
- 1/2 cup kalamata olives, pitted
- 1/2 bunch fresh basil leaves
- 2 (28-ounce) cans whole peeled tomatoes, drained and hand-crushed
- Pinch sugar
- Kosher salt and freshly ground black pepper
- 4 skinless, boneless, chicken breasts (about 11/2 pounds)
- 1/2 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1 tablespoon water
- 1 cup dried bread crumbs
- 1 (8-ounce) ball fresh buffalo mozzarella, water drained
