Banana Bread

Preheat oven to 350. Grease and flour a loaf pan
- 1 3/4 c. flour
- 1 1/2 c. sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1 c. mashed bananas
- 1/2 c. vegetable oil
- 1/4 c. plus 1 tbsp. buttermilk
- 1 tsp. vanilla
- 1 c. chopped walnuts
- 1/2 c. chocolate chips (optional)

Oil Pie Crust

Add liquids all at once to dry ingred
- 1/2 c. oil
- 1/4 c. milk
- 1 tsp. Salt
- 2 c. flour

- Marinate 4, 6-oz. salmon fillets in mixture of 1/2 c. soy sauce, 2 T. brown sugar, 1 t. grated lemon peel and 1/4 c. lemon juice, in plastic food storage bag for 40 min., turning bag over occasionally
Crispy Oven Fries

Preheat oven to 450F (230C)
- 2 medium russet potatoes, scrubbed clean
- 2 teaspoons (10 ml) grapeseed or olive oil
- 1 tablespoon (9 grams) corn starch
- Generous pinch of fleur de sel, plus more to serve
- Preheat oven to 450F (230C). Place potatoes on the center rack of the oven, and let them cook for 12 minutes while the oven is heating.
- Remove the potatoes from the oven, and let them cool a few minutes. Once cooled enough to handle, cut the potatoes into 1/4-inch (6 mm) sticks. Add the potatoes to a deep bowl, along with 1 teaspoon of oil, the cornstarch and salt. Toss until well coated.
- Brush a rimmed baking sheet with the remaining teaspoon of oil. Place the potatoes on it in a single layer. Bake for 15 to 20 minutes, until the underside is golden. Turn the potatoes, and bake until golden all over, about 15 more minutes. Serve hot.

Pumpkin Cheesecake

1. Preheat the oven to 325 degrees
- 1 1/2 c. graham cracker crumbs
- 2 T. sugar
- 2 T. unsalted butter, melted
- 2 egg whites, lightly beaten
- 1 1/2 # light cream cheese, at room temp
- 1/2 c. packed light brown sugar
- 1 3/4 c. pumpkin puree
- 3/4 t. cinnamon
- 1/2 t. ground ginger
- 1/2 t. ground mace
- 1/4 t. salt
- 1 c. light sour cream
- 1 large egg, lightly beaten
Salsa

Stir all ingredients together
- 3 cups chopped tomatoes
- 1/2 cup chopped green bell pepper
- 1 cup onion, diced
- 1/4 cup minced fresh cilantro
- 2 tablespoons fresh lime juice
- 4 teaspoons chopped fresh jalapeno pepper (including seeds)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper

- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup white sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1 (9 inch) prepared pie crust (or Graham cracker crust, whichever you prefer)
- 1/2 cup pumpkin puree
- 1/2 teaspoon ground cinnamon
- 1 pinch ground cloves
- 1 pinch ground nutmeg
