Mussels in White Wine Sauce

Put 1/2 cup of dry white wine in the bottom of a large pot (at least 4 qts)
- 2 # mussels, scrubbed clean under running water (I buy the ones that are already cleaned & cooked)
- 1/2 cup dry white wine
- 2 Tbl butter
- 1/4 cup minced shallots
- 1 Tbl minced garlic
- 2 teas flour (optional, omit for gluten-free version)
- 1/4 cup minced parsley
Tortellini Salad

Combine tortellini, broccoli and onion; Stir dressing into mixture
- Combine:
- 1 # cooked tortellini
- 2 bundles of broccoli - cut just using small flowers, no stems; blanch
- 'three minutes in microwave
- 1 very small red onion - chopped
- Dressing:
- 1 Cup mayo
- 1/2 Cup sugar
- Optional:
- Fried bacon pieces

- 1/2 C bread crumbs
- 3 eggs, lightly beaten
- 1 # ground chuck
- 1/2 # ground pork or veal
- 1/2 C Parmesan cheese
- 2 TBL dried oregano
- 1/4 Cup + 2 TBL Olive Oil (divided)
- 4 garlic cloves, finely chopped
- 1 teas lemon zest
- 1/4 teas allspice
- 1/2 teas black pepper
Scallop Scampi

In a large skillet, melt butter over med heat & saute garlic & onion till translucent
- 4 T butter/oleo
- 3 cloves garlic, minced
- 1 large onion, minced
- 1/2 C dry white wine
- 1 t salt
- 1/4 t black pepper
- 1/2 C grated romano cheese
- 1 (10.75 oz) can chicken broth
- 1 # bay scallops
- 1 # linguine pasta
- 1/4 C chopped parsley
Candied Yams

- 2 # yams
- 1/2 C brown sugar, packed
- 3 T butter or oleo
- 3 T light cream or milk
- 1/2 t salt
Linguini Salad

Super easy summer salad..
- 1 # Linguini noodles, cooked & drained
- 1 Large bottle Wishbone Italian Dressing
- 3 T McCormick's Salad Supreme
- 1 Can sliced black olives, drained
- 1 medium sween onion, diced
- 2 Tomatoes, diced
- 2/3 C pepperoni, sliced & quartered
- diced mild cheddar cheese
Lemon Bars

Preheat the oven to 350F. Lightly butter a 13X9 baking dish and line with a sheet of parchment paper
- Crust:
- 1 3/4 cup flour
- 2/3 cup confectioners' sugar (plus more for decoration)
- 1/4 cup cornstarch
- 3/4 teas salt
- 12 tbl butter, slightly cooler than room temperature, cut into 1" pieces

- Filling:
- 4 large eggs, lightly beaten
- 1 1/3 cup sugar
- 3 Tbl flour
- 2 teas grated lemon zest from 2 large lemons
- 3/4 cup lemon juice from 4 large lemons, strained
- 1/3 cup whole milk
- 1/8 teas table salt
Potato Salad

I never cared for Potato Salad until I found this recipe
- 1/3 C sugar
- 1/2 C milk
- 1 Egg
- 3/4 T celery seed
- 3/4 t salt
- 1 T cornstarch
- 1/4 C vinegar (cider)
- 4 T butter, unsalted
- 1/4 t dry mustard
- 1/4 C chopped onion
- 7 medium potatoes
- 1/4 C mayo
- 3 hard boiled eggs
Spicy Honey Chicken

Combine the rub spices in bowl and mix well
- RUB:
- 8 boneless skinless chicken thighs, about 2#'s
- 2 teas vegetable oil
- 2 teas granulated garlic or 1 teas garlic powder as a substitute
- 2 teas chili powder
- 1/2 teas onion powder
- 1/2 teas coriander
- 1 teas kosher salt
- 1 teas cumin
- 1/2 teas chipotle chili powder
- GLAZE:
- 1/2 cup honey
- 1 T cider vinegar
Cream of Mushroom Soup

Coarsely chop mushrooms and lemon juice
- 1 # regular white mushrooms, cleaned, quatered or sliced.
- 1 T lemon juice
- 1 T unsalted butter
- 2 T minced shallots
- 1 T chopped fresh thyme or 1 t dried thyme
- 1/2 bay leaf
- 1 t salt
- 1/2 t fresh ground pepper
- 2 C heavy cream
- 1 1/2 C chicken stock
- 1 t cornstarch dissolved in 1 T water
- Minced parsley for garnish
