Best Meatballs I

Do all the mixing by hand
- 1 # (combined) ground beef, pork & veal
- 3 large eggs, lightly whipped
- 1 Cup grated Romano Locatelli cheese
- 3/4 Cup bread crumbs
- 4 cloves garlic, minced
- 2 TBL Italian Parsley, finely chopped
- 1/4 teas black pepper
- 1/2 TBL kosher salt
Creamy Loaded Mashed Potatoes

- 3 # potatoes
- 1 1/2 C shredded cheddar (6 oz)
- 1 C mayo
- 1 C sour cream
- 3 green onions, finely chopped
- 6 slices bacon, cooked & crumbled
Tortillini Soup

In a large saucepan, over med-high heat, cook garlic in butter for 1-2 minutes
- 3 cloves garlic, minced
- 1 TBL butter or margarine
- 1 can (48 oz) Chicken Broth
- 1 pkg (19 oz)frozen cheese tortellini
- Grated Parmesean cheese or shredded mozzarella
- 1 pkg (10 0z) frozen chopped spinach
- 2 cans (14.5 oz ea) stewed tomatoes w/ juice
Potatoes - Grilled w/ Crabmeat-Green Onion Dressing

Place the potatoes in a large pot, covered with cold water by 2 inches, add 2T salt
- 6 russet potatoes
- Kosher salt
- 1/4 cup white wine vinegar
- 2 T mayonnaise
- 2 T Dijon mustard
- Freshly ground black pepper
- 1/2 cup olive oil
- 8 oz jumbo lump crabmeat
- 4 green onions (green and pale green parts), thinly sliced
- 1/4 cup chopped fresh flat-leaf parsley
- Canola oil, for brushing
- Cayenne powder
Pizza Dough

Dissolve yeast in 1/2 cup water
- 1 1/2 C warm water
- 4 1/2 C flour (bread)
- 1 T olive oil
- 2 1/2 teas sugar
- 2 1/2 teas salt
- 1/2 teas yeast
Crab & Shrimp Dip

Combine all ingredients. Bake 325 for 1 hour
- 8 oz crab meat ( I use two 4.5 oz cans)
- 8 oz tiny shrimp (I use two 4.5 oz cans)
- 1/2 red bell pepper, chopped small
- 1/4 red onion, chopped small
- 2 8-oz blocks of cream cheese, softened
- 1 cup mayo
- 2 Tbl lemon juice
- 1 teas Lea Perrins
- 2 Tbl hot sauce - or to liking
- 1/2 cup parmesan cheese
- 1/2 cup mozzarella cheese, shredded

- 2 T + 2 t olive oil
- 1 C chopped onion
- 3 cloves garlic, minced
- 3 C canned whole tomatoes, broken up
- 1 C chopped carrot
- 1/4 C dry red wine
- 1 t grated lemon zest
- 1 t dried oregano
- 1/2 t salt
- 1/8 t ground red pepper
- 12 oz rigatoni
- 24 medium shrimp, shelled and deveined
- 1 1/4 # sea scallops
- 3 oz shedded part skim mozzarella cheese
- 1 T chopped parsley, for garnish, optional
Green Bean Casserole

- 3/4 C milk
- 1/8 t pepper
- 1 can cream of mushroom soup
- 2 14.5 oz cans cut green beans, drained
- 1 1/3 C french's fied onions
Chicken Pot Pie w/ cheesy breadstick crust

Preheat the oven to 375F. Melt the butter in a large pot over meduim high heat, then add onion and carrots
- 4 T butter
- 1/2 C onion, diced
- 1/2 C carrot, sliced
- 1/2 C peas
- 1/2 C shredded cheddar cheese
- 3 C shredded cooked chicken or turkey
- 1/4 C flour
- 3 C chicken broth
- splash of white wine
- 1/4 t Turmeric
- Salt & Pepper to taste
- Chopped fresh Thyme to taste
- 1/4 C heavy cream
- 1 can refrigerated pizza dough
- 1 egg
- 2 T water
- OPTIONAL: parsley for garnish
Paradise Pumpkin Pie

This is a great fall desert
- 1 (9") pie shell
- 1 (8 oz) pkg cream cheese, softened
- 1/4 cup white sugar
- 1/2 t vanilla extract
- 1 egg, beaten
- 1 1/4 cup pumpkin puree
- 1 cup evaporated milk
- 2 eggs, beaten
- 1/4 cup packed brown sugar
- 1/4 cup white sugar
- 1 t ground cinnamon
- 1/4 t ground nutmeg
- 1/4 t salt
- 2 T all - purpose flour
- 2 T brown sugar
- 2 T butter, softened
- 1/2 cup chopped pecans
