    T all purpose flour

  • 1 1/2

    t baking powder

  • 1

    t sugar

  • 1/2

    t salt

  • 1

    c boiling water

  • 1

    c yellow corn meal

  • 1/4

    c milk

  • 1/2

    c whole kernel corn

  • 1

    slightly beaten egg

  • 1

    T snipped fresh chives

  • 3

    T cooking oil

  • 1

    r snipped fresh chives or cilantro (optional)

  • 1/3

    c sour cream

Directions

In a small bowl combine flour, baking powder, sugar and salt; set aside. In a med bowl stir boiling water into cornmeal to make a stiff mush. Stir in milk until smooth. Stir in corn, egg and the 1 T chives. Add flour mixture to cornmeal mixture and stir until combined. In a large skillet heat 2 T of the oil over med heat. Drop half of the batter by rounded tablespoons into hot oil, making 6 cakes. Cook for 3-4 min or until golden brown, turning once. Repeat with remaining batter for 12 cakes. Meanwhile if desired, stir the 1 t chives into sour cream; serve with corn cakes. If desired sprinkle with additional chives or cilantro.
