Three Cheese Baked Ziti

Preheat oven to 350. In large bowl, combine ricotta cheese, eggs, and Parmesan cheese; set aside
- 15 oz part skim ricotta cheese
- 2 eggs, beaten
- 1/4 c grated Parmesan cheese
- 16 oz box of ziti pasta, cooked and drained
- 1 jar (1lb 10oz)Ragu chunky garden style pasta sauce
- 1 c shredded mozarella cheese
Carrot, Tuna, and Avocado Salad

Put the carrots and sliced onion in a bowl and add salt
- 3 large carrots, peeled and julienned
- 1/2 medium onion, sliced thinly
- 1 t salt
- 5 oz canned Italian tuna, drained
- 1 avocado, cut into cubes
- few sprigs of parsley, minced (about 2-3 T)
- 2 t sesame oil
- 1/4 t black pepper
- salt to taste
Fresh Basil Vinaigrette

- 1/2 c fresh basil, leaves only
- 2 cloves garlic, chopped
- 1/8 t salt
- 1/8 t celery salt
- 1 3/4 c extra virgin olive oil
- 1/2 c red wine vinegar
- 1-2 dashes Worchestershire sauce
- 1 T stone ground mustard
- 1 1/2 t honey
Cheese and Tomato Toasts

Preheat oven to 400. In a small bowl, stir together the cheese, 1 T parsley and pepper until thoroughly combined
- 5-6 oz mild, creamy goat cheese or cream cheese at room temp
- 2 T chopped parsley
- 1/4 t black pepper
- 2 plum tomatoes, seeded and diced
- 3 T olive oil
- 1/8 t salt
- 1 loaf Italian bread
- 2 cloves garlic halved
Almonmd Pear Bread

- 2 c sugar
- 3/4 c corn oil
- 3 eggs
- 3 c flour
- 1/2 t baking powder
- 1 t baking soda
- 1/2 t salt
- 1 t cinnamon

- 1 c chopped almonds
- 1/2 t vanilla

Mashed Potato Puffs (leftovers)

- 2 c mashed potatoes
- 3 eggs beaten
- 3/4 c grated parmesan, divided
- 1/4 c minced chives
- 1/4 c diced turkey
- salt and pepper to taste
Pork with Savory Apple Stuffing

Preheat oven to 375. Combine stuffing mix, broth, apple, celery and 2/3 c onions in large bowl
- 1 pkg (6oz) corn bread stuffing mix
- 1 can chicken broth
- 1 small apple, peeled, cored, chopped
- 1/4 c chopped celery
- 1 1/3 c french's French Fried onions, divided
- 4 boneless pork chops, 3/4 in thick(about 1 lb)
- 1/2 c peach apricot sweet and sour sauce
- 1 T honey dijon mustard
Pasta Sausage Supper

Cook pasta according to directions on package
- 16 oz uncooked penne pasta
- 1 lb smoked kielbasa or polish sausage, cut into 1/4 in slices
- 1 med green pepper, julienned
- 1 med red pepper, julienned
- 1 med onion, halved and sliced
- 1 T canola oil
- 1 jar (26oz) meatless spaghetti sauce, warmed

- 1 Pillsbury refrigerated pie crust, softened as directed on box
- 3/4 c sugar
- 4 t cornstarch
- 2 t ground cinnamon
- 4 c thinly sliced, peeled pears (4 med)
- 3/4 c fresh or frozen cranberries
- 1/4 c all purpose flour
- 2 T butter or margarine, softened
