  • 1/2 c chopped green pepper
  • 2 cloves garlic, minced
  • 1 T cooking oil
  • 1 15oz can black beans, rinsed and drained
  • 1 14 1/2oz can diced tomatoes, undrained
  • 1 c tomato juice
  • 1 c frozen whole kernel corn
  • 2/3 c uncooked long grain rice
  • 1 t chili powder
  • 1/8 to 1/4 t ground red pepper
  • paprika

Place chicken in a 13x9 baking dish coated with Pam

  • 4 boneless skinless chicken breast halves (4 oz ea)
  • 1 T dry minced onion
  • 1/2 t garlic powder
