Spicy Chicken and Rice Bake

Skin chicken and set aside
- 2 1/2-3 lbs meaty chicken pieces
- 1/2 c chopped onion
- 1/2 c chopped green pepper
- 2 cloves garlic, minced
- 1 T cooking oil
- 1 15oz can black beans, rinsed and drained
- 1 14 1/2oz can diced tomatoes, undrained
- 1 c tomato juice
- 1 c frozen whole kernel corn
- 2/3 c uncooked long grain rice
- 1 t chili powder
- 1/8 to 1/4 t ground red pepper
- paprika
Swiss Chicken Supreme (skinny)

Place chicken in a 13x9 baking dish coated with Pam
- 4 boneless skinless chicken breast halves (4 oz ea)
- 1 T dry minced onion
- 1/2 t garlic powder
- 1/4 t salt
- 1/8 t pepper
- 4 slices reduced fat swiss cheese
- 1 can reduced fat, reduced sodium cream of chicken soup undiluted
- 1/3 c reduced fat sour cream
- 1/2 c fat free milk
- 1/3 c crushed reduced fat butter flavored crackers (about 8)
- 1 t butter melted
Sausage Corn Chowder

In a large pot, cook sausage until lightly browned
- 1 ½ pound ground sausage
- 1 medium onion (chopped coarsely)
- 6 medium potatoes (peeled, chopped, cooked)
- 1 bay leaf
- 2 cans cream-style corn
- 5 cups whole milk
- 6 English Muffins, toasted
Summer Squash and Mushrooms

Creamy Macaroni and Cheese

- 2 cups uncooked elbow macaroni
- 2 1/2 cups sharp cheddar cheese, grated
- 3 each eggs, beaten
- 1/2 cup sour cream
- 1 can cheddar cheese soup
- 4 tablespoons butter, cut into pieces
- 1/2 teaspoon salt
- 1 cup milk whole
- 1/2 teaspoon dry mustard
- 1/2 teaspoon pepper
Baked Beef Stew

- 1 cup water
- 3 tablespoons tapioca
- 2 teaspoons sugar
- 1 1/2 teaspoons salt
- 2 pounds lean beef stew meat, cut into 1" cubes
- 4 medium carrots, cut into 1" chunks
- 3 medium potatoes, peeled and quartered
- 2 stalks celery, cut into 1" chunks
- 1 medium onion, cut into 1" chunks
- 1 slice bread, cubed
- 1/2 teaspoon pepper
Cranberry Clafouti

- 1/2 c plus 2T granulated sugar
- 1/4 c plus 2T all purpose flour
- Pinch of salt
- 2 large eggs

- 1/2 cup cocktail sauce

- 1/8 t cayenne pepper
- 1/8 t hot pepper sauce

- 3/4 c refrigerated tortellini
