Cranberry Pecan Salad

1.Preheat oven to 400 degrees F (200 degrees C)
- 1 cup pecan halves
- 2 tablespoons raspberry vinegar
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- freshly ground black pepper to taste (optional)
- 6 tablespoons olive oil
- 6 cups mixed salad greens, rinsed and dried
- 3/4 cup dried cranberries
- 1/2 medium red onion, thinly sliced
- crumbled feta cheese
Chicken Tetrazzini Casserole

Preheat oven to 425 and grease 9x13 casserole
- 2 t veg oil
- 2-3 med to large chicken breasts
- salt and pepper to taste
- 16 oz pkg of spaghetti
- 6 T butter
- 1/2 med onion chopped
- 1 green pepper finely diced
- 1 c sliced mushrooms
- 1/4 c flour
- 1 c half and half
- 2 c chicken broth
- 1/4 c white wine
- 1/2 c shredded parmesan cheese
Overnight Salad

DRAIN pineapple and oranges, reserving juices
- 1 can pineapple tidbits 8oz
- 1 can mandarin oranges 11 oz
- 3 tablespoons lemon juice
- 1 tablespoon water
- 1 package cook and serve vanilla pudding 3.5oz
- 1 cup miniature marshmallows
- 1 cup whipped topping
- 1 each banana, sliced
Sausage Balls

Mix and shape into small balls
- 1 pound Hot Jimmy Dean Sausage
- 1 pound cheddar cheese, shredded
- 2 1/2 cups Bisquick® baking mix
Avocado, Roasted Corn and Shrimp Salad

Preheat grill to med heat
- 6 ears corn, husked
- 3 T olive oil divided
- 1 med tomato, cored and chopped
- 1/2 c fresh basil chopped
- 3 t fresh lime juice
- 1 lb ready to eat large shrimp, tails removed
- 1 large ripe avocado, seeded, peeled and cubed

- 1/2 cup green onion sliced
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded Monterey jack cheese
- 2 4 oz cans green chiles chopped
- 1/2 teaspoon ground cumin
- 3 each eggs
- 12 each corn tortillas
- oil
- 2 8 oz can enchilada sauce
- 1 can 4oz chopped olives
Oven Fried Chicken

In a small bowl combine egg and milk
- 1 beaten egg
- 3 T milk
- 1 1/4 c finely crushed saltine crackers or rich round crackers (about 35)
- 1 t dried thyme, crushed
- 1/2 t paprika
- 1/8 t black pepper
- 2 1/2 - 3 lb meaty chicken pieces(breast halves, thighs, and legs)
- 2 T butter or margarine, melted
Mozarella Pasta Salad

TOSS together first seven ingredients; cover and chill
- 2 cups corkscrew pasta cooked and drained
- 10 ounces fresh spinach torn in bite size pieces
- 2 cups chopped cooked bacon
- 1 can diced green chiles 4oz, drained
- 2 cups mozzarella cheese, cubed
- 3/4 cup shredded cheddar cheese
- 1 can black olives sliced or whole
- Dressing
- 1 cup vegetable oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup white wine vinegar or white vinegar
- 1/2 teaspoon black pepper
- 1/4 teaspoon cloves
- 1 clove garlic, minced
Paprika Meatballs

IN large bowl combine beef, bread crumbs, egg, onion and one tablespoon of the salad dressing mix until blended
- 1 pound lean ground beef
- 1 cup soft bread crumbs
- 1 each egg
- 1 small onion, diced
- 1 package Hidden Valley ranch Salad dressing mix
- vegetable oil
- 1 cup sour cream
- 1 small tomato, chopped
- 1/2 teaspoon paprika
Grilled Cilantro Lime Sweet Potatoes
