Cranberry Brisket

Place brisket in a greased 13x9 pan
- 3-4 lb brisket
- 1 can whole berry cranberry sauce
- 1 can (12oz) gingerale
- 1/2 c dried cranberries
- 1 envelope onion soup mix
Baked Chicken Chile Rellenos

PLACE a chicken breast half between 2 pieces of plastic wrap
- 6 each skinless boneless chicken breast
- 1/3 cup flour
- 3 tablespoons cornmeal
- 1/4 teaspoon ground red pepper
- 1 each egg
- 1 tablespoon water
- 1 can whole green chile peppers (4oz), seeded & cut in 1/2
- 2 ounces Monterey jack cheese, cut into 6 strips
- 2 tablespoons snipped fresh cilantro or parsley
- 1/4 teaspoon black pepper
- 2 tablespoons butter or margarine, melted
- 1 jar green or red salsa
Spicy Chicken Tortilla Soup

This is a diabetic recipe
- 1 15oz can diced tomatoes
- 1 1/2 t chili powder
- 1 1/2 t ground cumin
- 1/4 t black pepper
- 2 t worcestershire sauce
- 1/2 t hot pepper sauce
- 2 t olive oil
- 1 lb boneless, skinless chicken breasts cut into 1 inch pieces
- 1 med onion, chopped
- 1-2 jalapeno pepper, chopped
- 2 cloves garlic, minced
- 2 cans reduced sodium chicken broth
- 1/4 c all purpose flour
- 1/2 c water
- 1/3 c fat free sour cream
- 1/3 c chopped cilantro
- 4 oz reduced fat tortilla chips, crushed

1.Preheat oven to 350 degrees F (175 degrees C)
- 2 cup sall-purpose flour
- 1 1/4 cups white sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 2 cups shredded carrots
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/2 cup unsweetened flaked coconut
- 1 apple - peeled, cored and shredded

- 3/4 c whole wheat flour
- 1 1/2 t baking powder
- 1 1/2 t cinnamon
- 1/8 t salt
- 2 T coconut oil or unsalted butter, melted and slightly cooled
- 1 large egg, room temp
- 1 t vanilla
- 1/2 c maple syrup
- 3/4 c grated carrots (about 1 med)
Crispy Sweet Potato Fries

- 1 tsp kosher salt
- 1/4 tsp ground cayene pepper
- 1/2 tsp garlic powder
- 1/2 tsp ground cinnamon
- 3 sweet potatoes(about 2 1/2 lbs)

- 1 c granulated sugar
- 1 T ground cinnamon
- 1/2 c butter
- 1 c packed brown sugar
- 8 oz pkg cream cheese
- Two 7.5 oz cans refrigerated biscuits (10 in each can)
- 1 1/2 c coarsley chopped walnuts

- 1 c pecans, chopped
- 2 t baking powder

- 1 t freshly grated orange zest

- 1 c toasted, unsalted almonds
