Auntie's Carrot Cake

  • 2 c flour
  • 2 c sugar
  • 2 t cinnamon
  • 2 t baking soda
  • 4 large eggs
  • 1 t salt
  • 1 1/2 c canola or veg oil
  • 3 c finely grated carrots
  • Frosting
  • 1 lb powdered sugar
  • 8 oz cream cheese softened
  • 1 cube butter softened
  • 1 t vanilla


Preparation time 10mins
Cooking time 70mins


Step 1

Preheat oven to 350
Mix all dry ingredients thoroughly. Add oil and beat until smooth. Add eggs, one at a time. Stir in carrots.
Use either 2 nine in layer pans or one 9x13 pan. Spray pans with non stick cooking spray with flour.
Bake layer pans for 30-35 min and the 9x13 for 55-60 min.
Allow cake to cool before frosting.
Blend cream cheese and butter in a food processor or blender.
add sugar graduallty and blend well.
Add vanilla and blend until combined. Frost to your hearts desire.
