Bailey's Irish Cream Fudge

1. In a small bowl combine Bailey's and coffee crystals
- 3/4 c margarine or butter
- 3 c sugar
- 1/2 - 3/4 c evaporated milk
- 1/3 c bailey's irish cream
- 1 Tbsp instant coffee crystals
- 7 oz jar marshmallow cream
- 1 pkg vanilla morsels or butterscotch chips
- 1 tsp vanilla extract
Gentleman Joes

In a large saute pan cook ground sirloin until just browned
- 2 lbs. ground sirloin
- 1 medium onion, diced
- 1 cup your favorite prepared BBQ sauce (I use Paula Deen Smokey Apple Cinnamon BBQ Sauce)
- Salt and pepper
- 3 cups leftover mashed potatoes
- 3 slices thick bacon, cooked crisp and chopped, drippings reserved
- 1/2 cup Cheddar cheese, shredded
- 6 sandwich buns
Garden Lasagna

In blender combine basil, raw spinach, 1/2 t garlic and oil; process until thick sauce forms
- 1 c packed fresh basil leaves
- 1/2 c raw baby spinach leaves plus 1 lb baby spinach, blanced and squeezed dry
- 1 1/2 t minced garlic
- 1/2 c olive oil
- 1/4 c grated parmigiano-reggiano cheese
- kosher salt and freshly ground pepper to taste
- 3 c ricotta cheese
- 1 egg
- 4 T unsalted butter
- 1/4 c finely chopped shallots
- 1/4 c all purpose flour
- 3 c milk
- 1 lb mushrooms sliced thick and cooked golden brown
- 1 jar (16 oz)roasted red bell peppers, drained, sliced 1/4 inch thick
- 6 oz no boil lasagna noodles, torn into 2 inch pieces
- 4 1/2 c shredded mozzarella cheese
Chocolate Orange Biscotti

Line large baking sheet with parchment paper
- 2 cups + 2 T flour
- 1 1/2 t baking powder
- 1/4 t salt
- 3/4 c sugar
- 1/2 c unsalted butter, room temperature
- 2 large eggs
- 2 T Grand Marnier or other orange liqueur
- 1 T grated orange peel
- 1 c pecans, lightly toasted, coarsely chopped
- 6 oz bittersweet chocolate chips
Festive Pork Roast

Place roast in a large plastic bag set in a large deep bowl
- 5 lb boneless pork top loin roast, double loin tied
- 3/4 c dry red wine
- 1/3 c packed brown sugar
- 1/4 c vinegar
- 1/4 c ketchup
- 1/4 c water
- 2 T cooking oil
- 1 T soy sauce
- 1 clove garlic, minced
- 1 t curry powder
- 1/2 t ground ginger
- 1/4 t black pepper
- 2 t cornstarch

This recipe is from Ortega and is a staple around the holidays
- 2 T. yellow cornmeal
- 1 T. chili powder
- 3 packages (8 oz each) cream cheese,
- softened
- 2 large eggs
- 2 t. garlic powder
- 1 1/2 t ground cumin
- 2 cans (4 oz each) diced green chilis
- 1 cup sliced green onions, divided
- 16 oz jar of salsa
- 2 cups (8 oz) shredded cheddar cheese
- tortilla chips, crackers and or bagel

Sausage and Pepper Baked Ziti

Two Italian favorites in one dish
- 8 oz uncooked ziti rigati pasta
- 2 t. oil
- 1 med red bell pepper, chopped
- 2 cubanelle peppers, chopped
- 1 med onion, chopped
- 12 oz spicy or sweet Italian sausage
- 1 cup part skim ricotta
- 1 1/2 cup shredded part skim mozarella
- 1/4 cup grated parmesan
- 1/4 cup chopped parsley
- 2 cups marinara sauce

In a large bowl, beat the eggs, sugar, oil, orange juice and extract
- CARAMEL FROSTING:
- 3 eggs
- 1-1/3 cups sugar
- 1/2 cup canola oil
- 1/2 cup orange juice
