Honey Brushed Spicy Chicken Thighs

Combine all spices in a bowl
- 2 tsps. garlic powder
- 2 tsps. chili powder
- 1 tsp. salt
- 1 tsp ground cumin
- 1 tsp. paprika
- 1/2 tsp. ground red pepper
- (I used Emeril Lagasse's Essence I already had mixed together in an air-tight container or you can purchase in spice section of supermarket)
- 8 skinless, boneless chicken thighs
- Cooking Spray
- 6 tblsps. honey
- 2 tsps. cider vinegar
Slow-Cooked Turkey Chili

In a skillet brown turkey chop meat
- 2 lbs. ground turkey
- 1 cup onion, chopped
- 1 red pepper, chopped
- 4 cans (14.5oz.) stewed tomatoes, cut up
- 1 can (160z.) can kidney beans, rinsed and drained
- 2 cans pinto beans, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 tblsp. chili power
- 1 tsp. cumin
- 1 tsp. salt
- 1 pint of sliced mushrooms
- Shredded Cheddar Cheese
Classic Pot Roast

Heat oil in a saute pan over med-high heat
- 3 tblsp. vegetable oil
- 1 boneless chuck roast, trimmed, seasoned with salt and pepper (3-4 lb.)
- 1/4 cup all-purpose flour
- 2 tblsp. tomato paste
- 1/2 cup dry white wine
- 1 1/2 cups low-sodium beef broth
- 1 tblsp. Worcestershire sauce
- 2 cups sliced onions
- 6 medium carrots, peeled and cut into 2-3" pieces
- 3 large celery ribs,cut into 2-3" pieces
- 6 cloves garlic, chipped
- 3-4 sprigs fresh thyme
- 2 bay leaves
Cabbage Apple Slaw with Agave-Citrus Dressing

This can be made 1 day in advance, covered and refrigerated
- 3/4 cup mayonnaise
- 3/4 cup nonfat Greek yogurt
- 1 1/2 tblsp. agave syrup
- 1 1/2 tblsp. lemon juice
- 1 tblsp. apple cider vinegar
- Salt and freshly ground black pepper
- 1 Fuji or Granny Smith apple, peeled and shredded
- 2 (1lb.) packages shredded coleslaw mix
- 2 tblsp. finely chopped parsley or dill weed, for garnish

- 1/4 CUP TOMATO JUICE
- 1 TSP. TOMATO PASTE
- 1/4 TSP. WORCESTERSHIRE SAUCE
- 1 TBLSP. FRESH BASIL, CHOPPED
- 1 DASH BROWN SUGAR (OPTIONAL)
- 1/2 CUP WHOLE-KERNEL CORN, FRESH FROM 1 EAR, OR FROZEN AND THAWED
Original Chex Mix

- 3 cups Corn Chex cereal
- 3 cups Rice Chex cereal
- 3 cups Wheat Chex cereal
