Basic Butter Cake

Butter an flour two 9 inch round cake pans and preheat oven to 350 degrees
- 1 cup butter, sofened
- 1 1/2 cups sugar
- 3 large eggs
- 2 large egg yolks
- 1 tblsp. vanilla
- 3 1/4 cups cake flour
- 2 1/2 tsps. baking powder
- 1/4 tsp. salt
- 1 1/4 cups milk
Easy Pineapple Upside-Down Cake

Heat oven to 350 (325 for dark or nonstick pa)
- 1/4 cup butter or margarine
- 1 cup packed brown sugar
- 1 can (20 oz.) pineapple slices in juice, drained juice reserved
- 1 jar (6 oz.) maraschino cherries without stems, drained
- 1 box Betty Crocker SuperMoist yellow cake mix
Apricot Chicken

Sprinkle flour on a plate
- 4 - 5 oz. boneless, skinless chicken breasts
- 1/3 cup flour
- 2 tsps. canola oil
- 1/2 cup apricot preserves
- 1/2 cup fat-free, low-sodium chicken broth
- 1 tblsp. reduced sodium soy or tamari sauce
Comfort Meatballs

For the meatballs: In bowl, combine the ground beef and oats
- Meatballs:
- 1 1/2 lbs. ground beef
- 3/4 cup quick oats
- 1 cup milk
- 3 tblsp. very finely minced onion
- 1 1/2 tsp. salt
- Plenty of ground black pepper
- 4 tbslp. canola oil
- 1/2 cup all-purpose flour
- Sauce:
- 1 cup ketchup
- 4 - 6 tblsp. minced onion
- 3 tblsp. distilled white vinegar
- 2 tblsp. sugar
- 2 tblsp. Worcestershire sauce
- Dash of hot sauce, such as Tabasco
Peanut Butter and Jelly Cookie

Preheat oven to 325 degrees Lightly grease a cookie sheet with butter
- 1 cup smooth peanut butter
- 1/2 cup light brown sugar
- 1 tsp. baking soda
- 1 large egg
- 1/4 cup raspberry jam
Sliders with chipotle mayonnaise

1. For mayonnaise: Puree the first 3 ingredient in a food processor
- 1 cup mayonnaise
- 2 canned chipotle in adobo sauce
- Juice of 1/2 lime
- 1 1/2 lbs. ground beef, 80% lean, 20% fat
- Salt and freshly ground black pepper
- Cheese slices, your choice
- Mini burger buns
Chickpea Salad

Toss all ingredients together and chill
- 1 15.5 oz. can Goya chickpeas (rinsed and drained)
- 1/2 cup red bell pepper, chopped
- 1 small red onion, chopped (I use a little bit of onion, very strong)
- 1 medium cucumber, chopped (I use mini or English cucumber)
- 1 tbsp. balsamic vinegar
- 3 tbsp. olive oil
- 1/4 tsp. each garlic powder and oregano
- salt & pepper to taste
Jiffy Corn Casserole

Mix ingredients & pour into 9" x 13" casserole pan
- 2 boxes Jiff Corn Muffin mix
- 2 (16 oz.) cans corn-drained
- 2 (16 oz.) cans creamed corn
- 2 cups sour cream
- 2 sticks melted butter/margarine
