Eggplant Meatballs

In a large saucepan, heat oil & gently saute' garlic until golden brown
- 3 tblsps. olive oil
- 3 garlic cloves, minced
- 1 large eggplant, peeled & diced
- 1 tblsp. water
- 1 cup seasoned bread crumbs
- 1/2 cup fresh parsley, chopped
- 2 eggs, beaten
- 1/2 cup grated cheese
- Olive oil
- Marinara sauce, if desired
- Grated Mozzarella or Monterey Jack, if desired
Spaghetti with Chicken and Vegetable Medley

1. Saute' onion and zucchini in oil until tender
- 1 Onion, finely chopped
- 3/4 cup sliced yellow zucchini
- 1 to 2 tblsps. olive oil
- 4 cloves roasted garlic (optional)
- 1/2 cup frozen peas, thawed
- 2-1/2 cups pasta sauce
- Salt and freshly ground pepper
- 1 box Rigatoni Healthy Harvest Multigrain Spaghetti
- 8 oz. boneless, skinless chicken breasts
- Grated Romano or Asiago Cheese
WALNUT AND DRIED CHERRY MUFFINS

PREHEAT OVEN TO 350 DEGREES
- 1 CUP QUICK-COOKING OATS
- 3/4 CUP WHOLE-WHEAT PASTRY FLOUR OR REGULAR WHOLE-WHEAT FLOUR
- 1/4 CUP TOASTED WHEAT GERM
- 1 TSP. GROUND CINNAMON
- 1/4 TSP. SALT
- 1/2 CUP HONEY
- 1/3 CUP UNSWEETENED APPLESAUCE
- 1/4 CUP CANOLA OIL
- 1 EGG, BEATEN TO MIX
- 1 EGG WHITE
- 3/4 CUP CHOPPED DRIED CHERRIES, CRAISINS OR MIXED DRIED BERRIES
- 1/2 CUP FINELY CHOPPED WALNUTS
- COOKING SPRAY
- 1/4 CUP "FRUIT ONLY" APRICOT PRESERVES
Grilled Cod

1. Stack about 15 charcoal briquettes into a grill in a pyramid shape
- 2 (8 oz) fillets cod, cut in half
- 1 tblsp.Cajun Seasoning
- 1/2 tsp. lemon pepper
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 2 tblsps. butter
- 1 lemon, juiced
- 2 tblsps. chopped green onion (white part only)
Chicken Marsala

In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly
- 1/2 cup all-purpose flour
- 1 tblsp. Essence (I bought it already prepared)
- 2 (6 to 8 oz.) boneless, skinless chicken breasts, cut in halves and pounded thin
- 1 tblsp. olive oil
- 4 tblsps. butter
- 3 cups sliced mushrooms (cremini, oyster, shiitake)
- 3/4 cup Marsala
- 1 cup chicken stock
- Salt and pepper
- Chopped chivesm for garnish
Pasta and Cheese Florentine

1. Combine milk, water and soup mix in 3 qt
- 2 cups milk
- 1 pkge. KNORR Cream of Spinach Soup, Dip & Recipe Mix
- 2 cups (8oz.) shredded mozzarella or cheddar cheese
- 8 oz. elbows (about 1-3/4 cups)uncooked slightly and drained
- Mazzola No Stick Cooking Spray
