Crumb Cake

Cake Mix ingredients until batter is smooth pour into a greased and floured cookie sheet
- Cake
- 1 package of Dunkin Hines Butter Recipe
- 4 eggs, slightly beaten
- 2/3 cups of oil
- 2/3 cups of milk
- Crumbs
- 4 cups flour
- 2/3 cups brown sugar
- 2/3 cups regular sugar
- 3 sticks of margarine
- 1 tsp. vanilla
- 1 tsp. cinnamon
- Powdered sugar
- Chocolate drizzle (optional)
Rice and Beans

Saute' onion in olive oil, add ham, Sofrito, & Ricato mix
- 1-2 tblsps. olive oil
- 2 cans red kidney beans
- 1/2 an onion, diced
- Diced Ham (optional)
- 1 Heaping tblsp. each of Sofrito & Ricatto
- 1 pkge. Sazon
- 1/2 can tomato sauce
- 2 cups chicken broth
- 2 cups Jasmine rice
Tropical Salsa

Combine all and chill. Great topper for any protein or chip
- 1 large tomato, diced
- 1 small red onion, diced
- 1 small can diced pineapple, drained (or 2 cups fresh)
- 1 red or orange bell pepper, diced
- 1 small jalapeno pepper, seeded and diced

Porcupine Meatballs

In large bowl, combine ground beef, celery, rice and onion; mix well
- 1 1/2 lbs. ground beef
- 1 cup celery (chopped fine)
- 3/4 cup rice (uncooked)
- 1/2 cup onion (chopped fine)
- 2 - 8 oz. cans tomato sauce
- 2 cups water
Chicken with Broccoli and Garlic Sauce

Heat oil in a large skillet over medium-high heat
- 2 tsp. olive oil
- 1 lb. uncooked boneless, skinless chicken breast, cut into 1-inch pieces
- 1 tsp. dried thyme, or 2 tblsps. fresh minced thyme, or to taste
- 1/2 tsp. table salt
- 1/4 tsp. black pepper
- 3 cloves garlic minced, or more to taste (medium)
- 2 cups broccoli, florets
- 1 1/2 cups reduced-sodium chicken broth, divided
- 1 1/2 tblsps. cornstarch
- 2 cups cooked brown rice, kept hot
Poppy Seed, Noodle & Vegetable Toss

In medium skillet, combine water, margarine and bouillion; heat and stir until bouillion dissolves
- 6 ozs. noodles, cooked as pkge. directs
- 1/2 cup water
- 1 tblsp. margarine or butter
- 2 tsps. Wyler's Chicken-Flavor Bouillon Granules or 2 cubes
- 1/2 cup shredded carrots
- 1/2 cup sliced green onions
- 1 tsp. poppy seeds
Turkey Meatloaf

1. In large bowl, mix turkey, onion, celery and garlic 2
- 2 bs. lean ground turkey breast (or chicken breast)
- 1/4 cup water
- 1 cup onion, chopped
- 1/2 cup celery, diced
- 1 clove garlic, minced
- 1 cup rice, cooked (10 mins. in rice cooker)
- 2 egg whites
- 2 cups tomato sauce (sodium-free)
- 1/2 tsp. oregano
- 1/2 tsp. thyme
- 1/2 tsp. black pepper, freshly ground
- 1/4 cup chopped fresh parsley
- (Makes 2 meatloaves)
- 2 cups tomato sauce (sodium-free)
- (Put 1 cup of each on top of meatloaves)
- (Make this in 2 loaf pans)
Vegetable and brown rice paella

Preheat oven to 400 degrees
- 6 cups low-sodium vegetable broth
- 1/8 tsps. saffron
- 1 tsp. paprika
- 1/4 tsp. cayenne pepper
- 1/2 tsp. salt
- 1 tblsp. olive oil
- 1 medium onion, diced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 3 medium tomatoes or 4 large plum tomatoes, diced (or one 14 oz. can low-sodium diced tomatoes),
- 1 1/2 cups short-grain brown rice
- 1 small bunch thin asparagus, cut into 2 inch lengths
- 6 canned artichoke hearts, halved
- 1 cup frozen peas

- 1 tsp. freshly ground black pepper
- 1/2 tsp. dried oregano
- 1/2 cup chopped fresh basil leaves
- 4 garlic cloves, minced
- 2 tblsps. tomato paste
- 1 cup Marsala wine
- 1 15 oz. can diced tomatoes
- 1/4 tsp. red pepper flakes, optional
- 4 to 6 italian sandwich rolls, optional
Turkey Taco Salad

Preheat large nonstick skillet over medium-high heat
- 1 pkge. (20 ozs.) Butterball Fresh Ground Turkey
- 1 pkge. (1.25 ozs.) taco seasoning mix
- 1 can (14.5 ozs.) petite diced tomatoes with mild green chilies
- 1 cup frozen whole kernel corn, thawed
- 9 cups shredded lettuce
- 4 cups (about 4 ozs.) tortilla chips
- Shredded Cheddar cheese, sour cream, sliced green onions, sliced ripe olives (optional)
