- 3 TBSP. butter
- 1 bottle pork gravy
- 2 TBSP. caraway seeds
Chicken Piccata

Turkey tenderloin makes a great substitute for chicken breast
- 2 boneless, skinless chicken breasts, cut in half and pounded into cutlets
- Salt and black pepper
- All-purpose flour
- Nonstick spray
- 2 tblsp. vegetable oil
- 1/4 cup dry white wine
- 1 tsp. minced garlic
- 1/2 cup low-sodium chicken broth
- 2 tblsp. fresh lemon juice
- 1 tblsp. unsalted butter
- Fresh lemon slices
- Chopped fresh parsley
Slow Cooker Lentil Soup

Place ingredients in a 4 to 5 qt
- 2 medium uncooked carrots peeled, cut into large chunks
- 2 ribs medium uncooked celery, cut into large chunks
- 1 medium uncooked onion, cut into large chunks
- 2 medium garlic cloves, minced
- 2 cups dry lentils, picked over
- 3 bay leaves
- 1/2 tsp. dried thyme, crushed
- 1/2 tsp. table salt, or to taste
- 1/4 tsp. black pepper, or to taste
- 8 cups canned chicken broth
- 4 oz. uncooked Canadian-style bacon, diced(4-5 slices)
Spicy Honey Brushed Chicken Thighs

1) Preheat broiler 2) Combine first 6 ingredients in a large bowl
- 2 tsps. garlic powder
- 2 tsps. chili powder
- 1 tsp. salt
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1/2 tsp. ground red pepper
- 8 skinless, boneless chicken thighs
- Cooking Spray
- 6 tblsps. honey or agave
- 2 tsps. cider vinegar
Party Punch

Combine all ingredients in a bowl, stir and serve
- 1 bottle vodka (750 ml)
- 2 liters sparkling water
- 2 10 oz. packages frozen strawberries
- 1 12oz. can frozen lemonade
- 1 fresh basil to garnish
Southwestern Pot Roast Cooked in the Crockpot

Put beef broth in a small saucepan, removing any fat that has collected on top in the can
- 3 lb. boneless chuck roast, trimmed of visible fat
- 1 can reduced sodium beef broth
- 1 cup + 1/4 cup your favorite salsa (I used Pace Picante Sauce - mild. For South Beach Diet choose salsa with less than 2 grams sugar per serving)
- steak rub or your favorite seasoning for steak to rub on meat before browning (I like Pride of Szeged Steak Rub)
- 1-2 tsp. olive oil for browning meat

- 1/4 cup cider vinegar
- 3 tblsp. water
- 1/2 cup oil
- 1 tblsp. soy sauce
- 1 tblsp. brown sugar
- GREEK VINEGARETTE OR MARINADE
- 1/4 cup red wine vinegar
- 3 tblsp. water
- 1/4 cup olive oil & 1/4 cup vegetable oil
- 1/4 cup crumbled feta cheese & 2 tblsp. chopped ripe olives
- RASPBERRY VINEGARETTE OR MARINADE
- 1/4 cup cider vinegar
- 3 tblsp. water
- 1/2 cup oil
- 2 tblsp. raspberry preserves
- LEMON DILL VINEGARETTE OR MARINADE
- 1/4 cup water
- 3 tblsp. fresh lemon juice
- 1/2 cup oil
- 1 tblsp. chopped dill weed
- CILANTRO-LIME VINEGARETTE OR MARINADE
- 1/4 cup water
- 3 tblsp. fresh lime juice
- 1/2 cup oil
- 1-2 tblsp. chopped cilantro
Rigatoni ala Vodka

In large pot bring water to a boil
- 4 tblsps. olive oil
- 1/3 lb. Prosciutto, diced
- 1/4 cup Onions, diced
- 3 cloves of garlic, minced
- 1 can ("Nina"or "Luigi Vitelli"35oz.) Italian whole peeled plum tomatoes
- 1 Pomi strained tomatoes
- 4 oz. heavy cream
- 3 oz. + 1 oz. inexpensive Vodka
- 1/4 cup Reggiano Parmigiano cheese
- 1/3 tsp. pepper
- 3/4 lb.s of Rigatoni or Penne Pasta
- I double everything except for vodka, then froze.
Pasta (Anelletti-Circles) with Sausage and Greens

Cook the pasta in salted water
- 1 lb. Anelletti pasta from Trader Joe's (I couldn't find there so I got at Seven Bros. in Elwood or it can be found at Uncle Giuseppe's in Smithtown on Long Island)
- Olive Oil (approx. 1/2 cup)
- 1/4 lb. Italian or spicy sausage, crumbled (I used kielbasi)
- 4 cloves garlic, minced
- Four big handfuls of seasonal greens like baby spinach or arugala
- 1/2 cup grated Parmesan Cheese
