Chicken, Avacado, and Bacon Salad

Chop the chicken; add the celery and scallions
- Boiled Dressing:
- 2 cooked chickens (boiled with onion, thyme, bay leaf and parsley, vinegar, and salt and chilled overnight in liquid.)
- 1 c. celery
- 2/3 c. scallions
- 2 chopped avacados tossed with lemon juice
- 1 lbs. bacon, cooked
- 1 c. chicken stock, reduced to 1/2 c.
- 1/2 c. cider vinegar
- 1 egg
- 1 Tbs. sugar
- 1 Tbs. flour
- 1 tsp. dry mustard
- 3/4 c. light cream
Cumberland Cucumber Dip

Serve in a hollowed-out purple cabbage
- 8 oz. cream cheese, softened
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 Tbs. Worchestershire sauce
- 1/4 c. mayonnaise
- 3/4 c. chopped onion
- 2 c. chopped cucumber
- Large corn chips
Asparagus with Wasabi-Mayo Dip

Blanch asparagus in boiling salted water 1 minute
- 3 lb. asparagus, trimmed
- 1 c. mayo
- 4 tsp. soy sauce
- 1 1/2 tsp. sugar
- 2 tsp. lemon juice
- 2 tsp. wasabi paste
Greek Pasta Salad

If you like Greek salad..
- Vinaigrette:
- 1/4 c. rice wine vinegar
- 2 Tbs. Dijon mustard
- 1 minced close of garlic
- Salt and pepper to taste
- 2/3 c. extra-virgin olive oil
- Salad:
- 1-2 cucumbers, seeded and chopped
- 1 medium yellow pepper
- Salt and pepper
- 1/2 lb. cooked angel hair pasta
- 1 lb. cooked shrimp (optional)
- 8 oz. cherry tomatoes, halved
- 3/4 c. chopped Kalamata olives
- 1 c. feta cheese, crumbled
- 1/2 small red onion
- 2 tsp. dried oregano
Decadent French Toast Puff

Place torn croissants in greased 13"x9" pan
- 4 large or 5 medium croissants, chopped or torn
- 8 oz. softened cream cheese
- 1/2 c. butter, softened
- 1/4 c. maple syrup
- 10 eggs
- 1/2 c. maple syrup
- 3 c. half and half
- 1 tsp. ground cinnamon
- Powdered sugar
- Chopped, toasted nuts
King Ranch Casserole
