Coconut-Pecan Cookies

Cookies: Cream butter and the sugars; add the eggs and vanilla next
- Frosting:
- 1 egg
- 2/3 c. sugar
- 1 1/3 c. coconut
- 1 can (5 oz.) evaporated milk
- 1/4 c. butter
- 1/2 c. chopped pecans
- Cookies:
- 1 c. butter, softened
- 3/4 c. sugar
- 3/4 c. brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 2 1/4 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 4 c. (24 oz.) chocolate chips, divided
- 1/4 c. coconut
Potted Shrimp

Drain and soak shrimp in lemon juice for 1 hour
- 1 4 1/2 oz. can broken shrimp
- 1/4 c. lemon juice
- 1/4 c. butter at room temperature
- 1 8 oz. pkg. cream cheese at room temp
- 1 Tbs. dill
- 1/2 tsp. salt
- Dash cayenne
- Few springs of parsley
- 2 green onions
- 1 Tbs. coarsely ground black pepper

- 1 chicken, cut in pieces
- 2 Tbs. butter, melted
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 2 1/2 c. rich chicken stock
- 4 Tbs. butter
Grandmother Sauce

- 2 c. whipping cream
- 1 egg

- 1 c. coconut
- 2 1/3 c. flour
- 6 oz. (1 c.) chocolate chips
- 2 Tbs. corn syrup
- 2 Tbs. butter
- Topping:
- 1 c. chopped, toasted almonds

- 3 eggs

Italian Tomato Pasta

Peel tomatoes, and coarsely chop over a bowl, reserving juice
- 3 large vine-ripened tomatoes
- 2 Tbs. extra-virgin olive oil
- 3 cloves garlic, minced
- 1/4 c. sliced ripe olives
- 1 Tbs. chopped fresh basil
- 1 Tbs. chopped fresh parsley
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 oz. spaghetti, uncooked
- 4 oz. mozzarella cheese, cut into cubes
Pecan Pie

Combine butter, sugar, and corn syrup; cook over low heat, stirring constantly, until sugar dissolves
- 1/2 c. butter, melted
- 1 c. sugar
- 1 c. light corn syrup
- 4 eggs, beaten
- 1/4 tsp salt
- 1 tsp. vanilla
- 1 unbaked 9" pie shell
- 1 to 1 1/4 c. pecan halves
