Chicken Tequila Pasta

Saute cilantro, garlic and jalapeno in 2 Tbs
- 8 oz. pasta
- 1/3 c. chopped cilantro
- 2 Tbs. chopped garlic
- 2 Tbs. minced jalapeno
- 3 Tbs. butter
- 1/2 c. chicken stock
- 3 Tbs. tequila
- 2 Tbs. lime juice
- 3 Tbs. soy sauce
- 1 1/2 lb. cubed chicken
- 1/4 red onion, sliced
- 1 red pepper, sliced
- 1/2 green pepper, sliced
- 1/2 yellow pepper, sliced
- 1 1/2 c. cream
- Can double the jalapeno, butter stock, tequila and lime juice.

- 1/2 c. salad oil
- 1/3 c. red wine vinegar
- 1 Tbs. lemon juice
- 1 1/2 tsp. pepper
- 1 1/2 tsp. crushed red chiles

- 1 1/2 tsp. oregano
- 1 1/2 tsp. onion salt
- 1/2 c. mayonnaise

Pan- Seared Garlic Pork Roast

- 8 cloves garlic, minced
- 1 tsp. oregano
- 1 tsp. paprika
- Salt and pepper to taste
- 1 (3-4 lb.) pork loin roast
- Vegetable oil
- 2 bay leaves
- Juice of 1 lemon
- 1/4 c. butter
- 2 large onions, sliced
Poached Shrimp with Spicy Mayo and Garlic Breadcrumbs

Breadcrumbs: Heat vegetable oil in small saucepan until shimmering hot
- 1/2 c. vegetable oil
- 2 1/2 Tbs. minced garlic
- 2 tsp. cornstarch
- Kosher salt
- 4 slices home-style white sandwich bread (such as Pepperidge Farm)
- 1 Tbs. olive oil or melted butter
- 1 c. mayo
- 1/3 c. finely chopped fresh cilantro
- 1/4 c. finely chopped scallion
- 1 Tbs. minced fresh jalapeno; more to taste
- 1 Tbs. fresh lime juice
- 2 lb. jumbo shrimp (16-20 count)
Mexican Pepper Steak

In each of 2 large skillets, heat 1 Tbs
- 2 Tbs. olive oil
- 1 medium onion, sliced
- 2 medium Roma tomatoes, chopped
- 1 medium red bell pepper, julienned
- 4 halapeno peppers, julienned
- Salt and pepper
- 1 c. unsalted chicken broth
- 8 fresh bay leaves
- 1 lb. shaved beefsteak
- 2 Tbs. chopped cilantro

- 1 lbs. ground chuck
- 1 lb. ground sausage
- 1 onion, chopped
- 1 clove garlic, minced
- 1 c. salsa
- 5 cans whole chilies, drained (12 fresh)
- 2 c. grated Swiss cheese
- 2 c. grated sharp Cheddar
- 1/3 c. cornmeal
- 4 eggs
- 1/4 c. flour
- 1 1/2 c. milk
- 1/4 tsp. hot sauce

- Pizza Dough:
- 1 c. whole milk
- 2 Tbs. unsalted butter

- 2-3 Tbs. yellow cornmeal, for peel

- 8 oz. fresh mozzarella, sliced
- 4 oz. grated fontina
- 2 Tbs. chopped basil
- 2 Tbs. chopped parsley
- 1 c. warm water
- 1 pkgs. yeast
- 1 tsp. honey
- 2 Tbs. EVOO
- 2 3/4 c. flour

Fondue, Smoked Gouda with Bacon and Scallions

- 1 head of cauliflower, cut into florets
- 1 lb. asparagus

- 2 shallots, sliced
- 1 lb. mushrooms

- 1 1/2 lb. kielbasa
- 2 red pears
- 4 tsp. lemon juice, divided
- 1 baguette, cubed
- 6 slices bacon, cooked and crumbled
- 8 oz. Gruyere, shredded
- 1/3 lb., about 6 ounces, smoked Gouda, shredded
