Tex-Mex Egg Rolls with Cilantro Dipping Sauce

Cook rice according to package directions
- Sauce:
- 1 5-oz. package yellow rice
- 1 tsp. salt
- 1 lb. ground hot pork sausage
- 1 14.5-oz. can Mexican-styel diced tomatoes, undrained
- 2 c. shredded Monterey Jack cheese
- 6 6 green onions, chopped
- 1 package taco seasoning mix
- 28 egg roll wrapers
- 2 cans Mexican-style diced tomatoes
- 1 8-oz package cream cheese, softened
- 2 c. cilantro leaves
- 1 c. sour cream
- 3 garlic cloves, minced
Asparagus-Brie Soup

Cut the rind off the Brie
- 8 oz. Brie
- 1/2 c. butter
- 1/2-1 c. asparagus (or artichokes)
- 1/2 c. finely chopped celery
- 1/2 c. finely chopped carrots
- 1/2 c. finely chopped onions
- 1/2 c. flour
- 2 c. chicken broth
- 1 bay leaf
- 1/2 tsp. dried thyme
- 1/2 c. heavy cream
Banana Macadamia Nut Pancakes

- 2 c. flour
- 1/2 c. brown sugar
- 1 Tbs. sugar
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 2 c. buttermilk
- 1/2 c. melted butter
- 1 tsp. vanilla
- 1 ripe banana
- 1/4 c. salted macadamia nuts, chopped
Garlic Grilled Chicken with Pepper Relish

- Marinade:
- 2 chickens
- 1/4 c. olive oil
- 1/2 c. chopped garlic
- 1/2 c. fresh oregano
- 1 Tbs. sherry vinegar
- 2 Tbs. lime juice
- 1 Tbs. honey
- 2 tsp. ancho chile powder
- Relish:
- 1/4 c. chopped black olives
- 1/4 c. grilled red peppers, diced
- 1/4 c. grilled yellow peppers, diced
- 2 Tbs. red pepper flakes
- 1 Tbs. garlic
- 2 Tbs. fresh thyme
- 31/4 c. chopped parsley
- 2 Tbs. sherry vinegar
- 1 Tbs. honey
- 3 Tbs. olive oil
- Salt and pepper to taste

- 4 tomatillos
- 2 jalapenos
- 1/2 chopped onion
- 2 garlic cloves
- 1 handful cilantro, chopped
- 1 juiced lime
- 1 tsp. toasted cumin seeds
- 1/4 c. butter
- 1/4 c. flour
- 2 c. chicken stock
- 4 c. Jack cheese
- Cooked chicken
- Salsa:
- 1 pint cherry tomatoes, halved
- 2 green onions, chopped
- 1 jalapeno, chopped
- 2 handfuls cilantro, chopped
- 2 juiced limes
- Salt and pepper to taste
- Sour cream and guacamole
Blue Cheese Dressing

Mash blue cheese and buttermilk together with a fork until mixture resembles large-curd cottage cheese
- 2 1/2 oz. blue cheese
- 3 Tbs. buttermilk
- 3 Tbs. sour cream
- 2 Tbs. mayo
- 2 tsp. white wine vinegar
- 1/4 tsp. sugar
- 1/8 tsp. garlic powder
- Salt and pepper
Greek Salad Dressing

- 1/4 c. plus 2 tsp. olive oil
- 3/4 tsp. garlic powder
- 3/4 tsp. dried oregano
- 3/4 tsp. dried basil
- 1/2 tsp. pepper
- 1/2 tsp. salt
- 1/2 tsp. onion powder
- 1/2 tsp. Dijon
- 1/3 c. + 1 Tbs. red wine vinegar
Pasta with Sausage and Cream Sauce

- 1/4 c. butter
- 1 1/2 lb. sweet Italian sausage, casing removed
- 2 c. heavy cream
- 1 c. dry white wine
- 1 Tbs. minced fresh parsley
- 1/2 tsp. nutmeg
- 1/2 c. Parmesan
- 12 oz. pasta, cooked al dente
- 1/2 c. Parmesan
- 1 Tbs. fresh parsley

- Sauce:
- 2 lbs. cooked chicken
- 2 c. leeks, sliced
- 1 lb. mushrooms, sliced
- 2 Tbs. garlic, minced
- 2 tsp. each dried basil, thyme, and oregano
- 1/2 tsp. red pepper flakes
- 1/2 c. dry white wine
- 1/2 c. chicken broth
- Juice of 1/2 lemon
- Salt and pepper to taste
- Bechamel sauce (see below)
- 1 lb. fresh mozzarella, sliced
- 6 oz. Parmesan, grated
- Lasagna sheets
- 1 c. yellow onion, diced
