Tried this one and it was very good

  • Olive oil
  • 2 large eggs
  • 2 Tablespoons water
  • 1 cup plain or Panko breadcrumbs
  • 1 cup finely grated Parmesan cheese, plus 2 Tablespoons
  • 2 teaspoons Italian seasoning
  • Kosher salt and ground black pepper
  • 2 large eggplants, peeled and sliced into 1/2-inch rounds
  • 3 cups (24 ounces) pasta sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced mushrooms, I used a package of mushrooms from Costco so had a lot of them. (optional)

  • 1 30 oz. bag of frozen, shredded hash browns
  • 1 large 32 oz container of chicken broth (I used reduced sodium. You can also use 3 smaller cans)
  • 1 can of fat free cream of chicken soup
  • 1/2 cup onion, chopped
  • 1/4 tsp. ground pepper
  • 1 pkg. cream cheese (I used 1/3 less fat – but don’t use fat free because it won’t melt)
  • Toppings: shredded cheddar cheese, sour cream, green onions, bacon, etc.
