Baked Eggplant Parmesan

Tried this one and it was very good
- Olive oil
- 2 large eggs
- 2 Tablespoons water
- 1 cup plain or Panko breadcrumbs
- 1 cup finely grated Parmesan cheese, plus 2 Tablespoons
- 2 teaspoons Italian seasoning
- Kosher salt and ground black pepper
- 2 large eggplants, peeled and sliced into 1/2-inch rounds
- 3 cups (24 ounces) pasta sauce
- 2 cups shredded mozzarella cheese
- 1 cup sliced mushrooms, I used a package of mushrooms from Costco so had a lot of them. (optional)
Creamy Potato Soup

Toss the hash browns, chicken broth, cream of chicken soup, chopped onion, and ground pepper into your crock-pot
- 1 30 oz. bag of frozen, shredded hash browns
- 1 large 32 oz container of chicken broth (I used reduced sodium. You can also use 3 smaller cans)
- 1 can of fat free cream of chicken soup
- 1/2 cup onion, chopped
- 1/4 tsp. ground pepper
- 1 pkg. cream cheese (I used 1/3 less fat – but don’t use fat free because it won’t melt)
- Toppings: shredded cheddar cheese, sour cream, green onions, bacon, etc.

Heath Cake

- 1 package devils food, chocolate or German chocolate cake mix
- 1 can sweetened condensed milk
- caramel ice cream topping
- 1 (8 ounce) container of frozen whipped cream
- 4 - 5 Heath bars, chopped up
MUSHROOM HERB GRAVY

Rinse the mushrooms clean and slice thinly
- 3 Tbsp vegetable oil
- 2 cloves garlic
- 8 oz. mushrooms
- 3 Tbsp all purpose flour
- 2 cubes vegetable bouillon
- 2 cups water
- 3 sprigs fresh thyme
- 1 tsp dried sage
- to taste salt and pepper
Stove-Top Macaroni and Cheese with Roasted Tomatoes

Preheat oven to 375°. Place tomatoes in a 13 x 9-inch baking dish coated with cooking spray
- 3 cups halved cherry tomatoes
- Cooking spray
- 1/4 teaspoon black pepper
- 3 ounces sourdough bread, torn into pieces
- 1 teaspoon butter, melted
- 12 ounces large elbow macaroni
- 2 cups (8 ounces) shredded extrasharp cheddar cheese
- 1/4 cup egg substitute
- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon ground red pepper

- 3/4 cup (6 ounces) half and half
- 1/3 cup sugar
- 1 1/2 tablespoon vanilla
- 2/3 cup nonfat dry milk powder
- 2 to 3 cups raw spinach
- 2 1/2 to 3 cups ice

- 4 ounces cream cheese, softened
- 2 tablespoons butter, softened

- 1 quart Whole Milk
- 1 cup Vegetable Oil

- 2 packages Active Dry Yeast, 0.25 Ounce Packets
- 8 cups (Plus 1 Cup Extra, Reserved) All-purpose Flour
- 1 teaspoon (heaping) Baking Powder
- 1 teaspoon (scant) Baking Soda
- 1 Tablespoon (heaping) Salt
- Plenty Of Melted Butter
- 2 cups Sugar
- Generous Sprinkling Of Cinnamon
- MAPLE FROSTING:
- 1 bag Powdered Sugar
- 2 teaspoons Maple Flavoring
- 1/2 cup Milk
- 1/4 cup Melted Butter
- 1/4 cup Brewed Coffee
- 1/8 teaspoon Salt
