Szechuan Shrimp & Ruby Grapefruit Salad

Salad: Bring a saucepan filled with water to a boil over high heat
- Salad:
- 1 pound medium shrimp, peeled, with tails on
- 6 ounces dried vermicelli rice noodles
- 1 large ruby grapefruit, peeled
- 1 cup torn mint leaves
- Dressing:
- 1/4 cup honey
- 1/4 cup freshly squeezed grapefruit juice
- 2 tablespoons toasted sesame oil
- 1 tablespoon fish sauce
- 1/2 teaspoon ground Szechuan peppercorns
Mocha Chocolate Chip Cookies

- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/4 cups Caffe D'Vita Mocha Cappuccino Mix
- 4 tablespoons butter, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1 egg
- 1/2 cup chocolate chips
Creamy Mashed Potatoes

Peel potatoes (cut potatoes in half if very large)
- 4 lbs (12 medium) russet potatoes, peeled
- 1 1/4 cups hot milk (we used whole milk)
- 2 sticks (226 grams) unsalted butter at room temperature (not melted)
- 1 1/2 tsp salt, or to taste (we used sea salt)
- 1 Tbsp fresh parsley or chives, finely chopped for garnish (optional)
ITALIAN ORZO SPINACH SOUP

Heat oil in a large stockpot over medium-high heat
- 2 tablespoons olive oil
- 1 small white onion, peeled and diced
- 1 cup diced carrots
- 1 cup diced celery
- 3 cloves garlic, peeled and minced
- 6 cups chicken or vegetable stock
- 1 (14-ounce) can fire-roasted diced tomatoes
- 1 1/2 cups (about 8 ounces) DeLallo whole wheat orzo pasta, or other whole wheat pasta
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried rosemary
- 4 cups loosely-packed spinach
- salt and black pepper
PUMPKIN SHEET CAKE

Preheat oven to 350°F. Grease a 13 x 18 jelly roll pan with butter or spray
- PUMPKIN SHEET CAKE:
- 1 cup (2 sticks) unsalted butter, melted
- 1 cup milk
- 1/2 cup pureed plain pumpkin (canned plain pumpkin)
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- CINNAMON CREAM CHEESE FROSTING:
- 1/2 cup (1 stick) unsalted butter, softened
- 8 oz cream cheese, softened
- 1/3 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 5 1/2 cups powdered sugar
Apple Dapple Cake

- 3 cup all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup pecans, chopped
- 1 cup vegetable oil
- 2 cup sugar
- 3 eggs
- 2 teaspoon vanilla
- 3 cups raw apples, peeled and chopped fine
- 1 cup packed brown sugar
- 1/4 cup milk
- 3/4 cup butter or margarine(1 -1/2 sticks)
Cauliflower Casserole, Loaded

Preheat oven to 350 degrees Steam cauliflower florets until tender, about 5 minutes
- 2 lbs cauliflower florets
- 8 oz shredded sharp cheddar cheese, divided
- 8 oz shredded Monterey Jack cheese, divided
- 8 oz block cream cheese, softened
- 4 tablespoons heavy cream
- 2 bunches green onions, sliced (1 1/2 cups)
- 6 sliced bacon, cooked and crumbled
- 1 clove garlic, grated
- Salt & pepper to taste
