Fresh Pumpkin Pie

Made from garden harvested pumpin
- 1 cup sugar - or 1 cup Splenda, or 3/4 cup honey (honey may make a heavier pie, though)
- 1.5 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground allspice
- one half teaspoon ground ginger
- one half teaspoon salt (optional)
- 4 large eggs
- 3 cups pumpkin puree
- 1.5 cans (12oz each) of evaporated milk
- 1/2 teaspoon of vanilla extract (optional)
Shepherd's Pie

Boil potatoes in salted water until tender, about 12 minutes
- 2 pounds potatoes, such as russet, peeled and cubed
- 2 tablespoons sour cream or softened cream cheese
- 1 large egg yolk
- 1/2 cup cream, for a lighter version substitute vegetable or chicken broth
- Salt and freshly ground black pepper
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 3/4 pounds ground beef or ground lamb
- 1 carrot, peeled and chopped
- 1 onion, chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup beef stock or broth
- 2 teaspoons Worcestershire, eyeball it
- 1/2 cup frozen peas, a couple of handfuls
- 1 teaspoon sweet paprika
- 2 tablespoons chopped fresh parsley leaves
Roast Chicken

Preheat the oven to 425 degrees F
- 1 (5 to 6 pound) roasting chicken
- Kosher salt
- Freshly ground black pepper
- 1 large bunch fresh thyme, plus 20 sprigs
- 1 lemon, halved
- 1 head garlic, cut in half crosswise
- 2 tablespoons (1/4 stick) butter, melted
- 1 large yellow onion, thickly sliced
- 4 carrots cut into 2-inch chunks
- 1 bulb of fennel, tops removed, and cut into wedges
- Olive oil
Peach Lemonade

Combine the first 3 ingredients in a medium saucepan over medium-high heat
- 4 cups water
- 2 cups coarsely chopped peaches
- 3/4 cup sugar
- 1 cup fresh lemon juice (about 6 lemons)
- 4 cups ice
- 1 peach, pitted and cut into 8 wedges
Homemade Pizza Dough

Combine warm water with olive oil
- 2 cups all-purpose flour
- 2 1/4 teaspoons (1 package) instant dry yeast
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2/3 cup lukewarm water (105-115 F)
- 1 tablespoon extra virgin olive oil
Peach Crisp

Heat oven to 350° F. In a large bowl, toss the peaches, granulated sugar, and 1 tablespoon of the flour
- 5 pounds peaches (about 12), each cut into 8 wedges
- 1/3 cup granulated sugar
- 3/4 cup plus 1 tablespoon all-purpose flour
- 1 1/4 cups light brown sugar
- 1/4 teaspoon kosher salt
- 3/4 cup (1 1/2 sticks) unsalted butter, chilled and cut into small pieces
- 2 cups rolled oats
- 1 cup almonds, roughly chopped
Folded Hazelnut Cookies

Preheat oven to 350°. In a small bowl, mix hazelnuts and sugar
- 1 tablespoon finely chopped hazelnuts
- 1 tablespoon sugar
- 1-1/2 cups all-purpose flour
- 1/2 cup confectioners' sugar
- 1/4 cup cornstarch
- 3/4 cup cold butter, cubed
- 2 tablespoons Nutella
- 1 egg, lightly beaten
Whole-Wheat Zucchini Bread with Cinnamon & Dark Chocolate Chunks

Preheat oven to 350°F. Oil a 9x4 inch loaf pan and line with parchment paper
- Dry ingredients:
- 1 1/2 cups whole-wheat flour
- 1 1/2 cups cake flour (or all-purpose)
- 2 teaspoons freshly ground cinnamon (or 1 Tablespoon pre-ground)
- 1/4 teaspoon freshly grated nutmeg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Wet ingredients:
- 2 eggs, room temperature
- 1/3 cup canola oil (or peanut)
- 3/4 cup plain yogurt
- 1/3 cup buttermilk (or regular milk with a splash of vinegar)
- 1 cup organic Turbinado sugar (or brown sugar, firmly packed)
- 2 teaspoons pure vanilla extract
- 2 1/2 cups finely grated zucchini
- 4 oz dark chocolate, chunked
YELLOW SQUASH CASSEROLE

preheat oven to 400 degrees Heat olive oil over med heat in a large skillet Saute onions and garlic for 2-3 min
- 4 cups yellow squash (about 2 squash)
- 1 tbsp olive oil
- 1 yellow onion, diced
- 2 cloves of garlic, chopped
- 1/4 c water
- 1 sleeve of Ritz crackers
- 1 heaping cup cheddar cheese
- 2 eggs, beaten
- 3/4 cup milk
- 1/4 c butter, melted
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp butter
