Jalapeño Popper Dip

Preheat oven to 375 degrees F
- 1 4 oz can diced jalapenos , well drained OR 4-6 fresh jalapenos, roasted and diced (include seeds if you like it really spicy)
- 1 8 oz package cream cheese , softened
- 1 cup sour cream
- 1 teaspoon garlic powder
- 2 cups shredded cheddar cheese
- 3/4 cup shredded parmesan cheese
- Topping
- 1 cup Panko bread crumbs
- 4 tablespoons butter or margarine , melted
- 1/4 cup shredded parmesan cheese
- 1 tablespoon fresh parsley
PUMPKIN NUT CAKE

Cream eggs, pumpkin, oil, sugar, and vanilla with mixer
- 3 eggs
- 1 (15 ounce) can 100% pumpkin (Not the pumpkin pie mix)
- 3/4 cup oil
- 1 1/2 cups sugar
- 1 teaspoon vanilla flavoring
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 cup walnut pieces
Quinoa and Black Bean salad

Over medium heat, heat oil in a saucepan and saute the onion and garlic until soft and translucent
- 1 teaspoon extra-virgin olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3/4 cup quinoa, uncooked
- 1 1/2 cups vegetable broth (low sodium preferred)
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- salt to taste
- 1 cup frozen corn kernels
- 1 (15 ounce) cans black beans, rinsed and drained
- 1/2 cup fresh cilantro, chopped
- 1 lime, juiced (2 tablespoons)
- 1 jalapeno, seeded and finely diced (optional)
Pimento Cheese

Combine all ingredients in a medium bowl, mash with a fork, and stir with a rubber spatula until thoroughly mixed
- 1 heaping cup (8 ounce) sharp cheddar, room temperature, grated fine
- 1 heaping cup (8 ounce) extra-sharp cheddar, room temperature, grated fine
- 1/2 cup Duke’s or favorite mayonnaise
- 8 0z jar chopped pimiento peppers, drained
- 1 tsp. very finely grated onion
- 1 tsp. Worcestershire sauce
- 1/4 tsp garlic powder
- dash of dried mustard
- 1 tsp. ground black pepper
- 1/2 tsp. salt
- 1/4 tsp. cayenne
- Dash or two of Tabasco
- Sometimes omit the onions, and other times add chopped toasted pecans if stuffing celery.
