What I really enjoy about this Mexican Casserole besides the amazing flavors is how easy it is to prepare
- 1 pound ground beef
- 1 (1 1/4 ounce) package taco seasoning
- 1 (15 ounce) can refried beans
- 2 cups colby jack cheese
- 1 cup salsa
- 1 (2 1/3 ounce) can sliced black olives, drained
- 1 tomato, chopped
- 2 cups corn chips, crushed

- 1 pound Potatoes
- 1/4 Cup Butter
- 1 Can Cream of Chicken Soup
- 1/2 Pint Sour Cream

Creamy Spinach Bake

- 3 (10-ounce) packages frozen spinach
- 2 tablespoons unsalted butter
- 1/4 cup finely chopped shallots
- 2 to 3 large garlic cloves, minced
- 6 ounces cream cheese, at room temperature
- 1 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon red pepper flakes
- Freshly ground black pepper
- 2 tablespoons breadcrumbs
- 2 tablespoons grated Parmesan
