Meat Loaf

Preheat oven to 350°. In a large bowl, combine the first 6 ingredients
- 3/4 cup oatmeal
- 3/4 cup milk
- 1 egg
- 1/2 cup onion, finely diced
- 1 1/4 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups ground meat
- 2 Tbsp brown sugar
- 1 Tbsp mustard
5 MINUTE ARTISAN BREAD

Add warm water* to a large bowl
- 1 1/3 cups warm water at 100-110˚F
- 2 1/4 teaspoons granulated yeast*
- 1 1/2 teaspoons sea salt or 1 teaspoon regular salt.
- 1 tablespoon sugar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon finely chopped fresh finely chopped herbs (optional)
- 1 cup whole wheat flour**
- 2 2/3 cups all-purpose flour
Chicken Tacos with Mandarin Orange Coleslaw

Coleslaw: In a small bowl, whisk together vinegar, oil, honey, mustard, lemon juice, salt and pepper Place colesl
- Mandarin Coleslaw:
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 1 Tbsp honey
- 1 Tbsp spicy brown mustard
- Juice of one lemon
- 1/4 teaspoon each salt and pepper
- 1 packaged coleslaw (or fresh)
- 3 Mandarin oranges, peeled and segmented
- Chicken:
- 4 chicken breasts, seasoned, cooked and sliced
- 8 taco shells
- 1 cup guacamole
Zucchini Onion Pie

In a large bowl, whisk the first seven ingredients
- 3 eggs
- 1 cup grated Parmesan cheese
- 1/2 cup canola oil
- 1 tablespoon minced fresh parsley
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 cups sliced zucchini
- 1 cup biscuit/baking mix
- 1 small onion, chopped
Peanut Butter Marinated Chicken Thighs

Pat thighs dry with a paper towel
- 4 chicken thighs
- 1 cup peanut butter
- 1/4 cup brown sugar
- 4 garlic cloves, minced
- zest and juice of 1 lime
- 1/2 teaspoon crushed red pepper flakes, or to taste
- 1/4 teaspoon pepper
- 1/4 cup soy sauce
- 1/2 cup water
Spicy Peanut Butter Dip

Whisk everything together until smooth
- 1/4 cup peanut butter
- 2 tablespoons brown rice vinegar
- 1/2 teaspoon Asian-style chili-garlic sauce (or) to taste for desired heat level
- 1 1/2 teaspoons grated fresh ginger
- 2 tablespoons hot water
Broccoli Salad

Prepare and toss together salad ingredients
- DRESSING:
- 5 cups broccoli florets,uncooked
- 1/2 medium red onion, thinly sliced
- 1/2 cup roasted, unsalted sunflower seeds*
- 8 slices bacon, cooked and crumbled
- 1 cup old cheddar cheese, grated
- 1 cup Hellman's Light Mayonnaise
- 4 Tbsp. white sugar
- 3 Tbsp. white wine vinegar (You may also use regular white vinegar)
- OPTIONS:
- In place of or in addition to the sunflower seeds you may use any of the following:
- raisins, dried cranberries, (delicious!), chopped dried apricots, banana chips, or most any dried fruit; walnuts, pecans, almonds, peanuts and any other type of seed.
Fresh Fruit Smoothie

- 1/2 cup fruit juice concentrate, refrigerated
- 1/2 cup yogurt
- 1 rounded cup of fresh or thawed fruit
- 2 cups ice
Large Zucchini? Make Zucchini Relish

Grind / Grate Coarsely: 10 cups Zucchini 5 cups Onions 5 Tbsp Salt 1 Red pepper Let stand over night then drain...
- 10 cups Zucchini
- 5 cups Onions
- 5 Tbsp Salt
- 1 Red pepper – (green is good option too)
- 2 1/4 cups vinegar
- 1 Tbsp dry mustard
- 1 tsp Nutmeg
- 3 1/2 cups Sugar
- 1/2 tsp Black Pepper
- 1 tsp Turmeric
- 2 tsp Celery Salt
- If you grate small Zucchini use entire Zucchini. If you use large Zucchini just cut in half and with a spoon scrape out seeds.
Tomato and mozzarella skewers

Wash and dry the tomatoes
- 1 pint cherry tomatoes (16)
- 4 oz. mozzarella (16 cherry-sized balls)
- 3/4 oz. fresh basil
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. balsamic vinegar
- Sea salt and black pepper to taste
