- 2 lemons, zested
- 2 limes, zested and juiced to 1/4 cup (juice more limes if necessary)

- 1/4 vegetable oil
- 16 jumbo shrimp, cleaned, deveined

Salad Dressing: Using food processor, mix vegetable oil and lime juice
- Salad:
- 1/4 cup maple syrup
- 2 Tabl. vegetable oil
- 2 Tabl. lime juice
- 1/4 tesp. salt
- 1/4 tesp. pepper
- 2 large Red Delicious Apples(or what ever you like)
- 1/4 cup gorgonzola cheese
- 2 Tabl chopped pecans
