- 4 chicken breasts skinless and boneless
- 4 thin slices prosciutto di Parma
- 1/2 pound Gruyere, grated
- 1/4 cup all-purpose flour
- Kosher salt and freshly ground black pepper
- 1 cup panko bread crumbs
- 4 sprigs fresh thyme, leaves only
- 1 clove garlic, peeled and finely minced
- 2 tablespoons unsalted butter, melted
- 2 eggs
- Extra-virgin olive oil
Blue Cheese and Brie Quesadillas with a Pear and Brown Sugar Compote

- 1 tablespoon butter
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1 pound cooking pears, such as Bartlett, cored, quartered and small diced
- Pinch salt
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1/2 pound blue cheese, crumbled (recommended: Maytag Farms Blue Cheese)
- 1/2 pound Brie, thinly sliced
- 16 small flour tortillas
- Vegetable oil, for pan frying
- 1 cup walnut pieces
- 2 tablespoons ground cinnamon and 2 tablespoons sugar, combined

Makes 1 3/4 cups In food processor with metal blade attached,mince garlic
- 1 clove garlic
- 1 large ripe Hass avacado, halved,pitted, peeled
- 2 T. cider vinegar or fresh lemon juice
- 2 T. peeled,seeded & grated cucumber
- 2 T. chopped scallion
- 1 T. chopped fresh parsley
- 1 T. chopped fresh taragon
- 3/4 t. salt
- 1/4 t. freshly ground black pepper
Irresistible Chocolate Cake

Cake: Preheat oven to 350 degrees
- Cake:
- 2 cups superfine sugar
- 1/2 cup cocoa powder
- 1 cup vanilla yogurt (strained at least 2 to 3 hours)
- 1 stick butter, softened
- 2 eggs
- 2 cups cake flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup Kahlua
- 6 ounces semi-sweet mini chocolate chips
- Glaze:
- 10 ounces semi-sweet chocolate
- 1 ounce unsweetened chocolate
- 1-1/2 teaspoon unsalted butter
- 3/4 cup heavy cream
- 1 Tablespoon Kahlua

- 1/2 cucumber, peeled, seeded and finely diced

- 1/4 cup chopped fresh cilantro leaves

- 1/2 cup clam-tomato juice (recommended: Clamato), optional
- 1 tablespoon bottled hot sauce (recommended: Huichol), optional
