- Pepper Jelly Vinaigrette:
- 3/4 cup chopped pecans
- 5 cups seeded and cubed watermelon
- 1 (6-oz.) package mâche, thoroughly washed
- Pepper Jelly Vinaigrette
- Yield: Makes 3/4 cup
- 1/4 cup rice wine vinegar
- 1/4 cup pepper jelly
- 1 tablespoon fresh lime juice
- 1 tablespoon grated onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup vegetable oil
Sweet and Spicy Drumettes

- 6 tablespoons unsalted butter
- 1 cup honey
- 2 tablespoons distilled white vinegar
- 2 tablespoons Worcestershire sauce
- 1/2 cup chopped pecans
- 2 tablespoons ground ancho chile* (or chipotle powder)
- 2 teaspoons garlic powder
- Salt and freshly ground black pepper
- 2 pounds chicken drumettes
Roasted Fish on Rosemary

Heat oil in a medium nonstick skillet over high heat just until hot
- 1 tablespoon olive oil
- 1 (12-ounce) boneless fish fillet, 1 inch thick
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 8 sprigs fresh rosemary
- 2 teaspoons chopped fresh rosemary
- 1 lemon, thinly sliced

Preheat oven 450 degrees Add cornstarch, 1 1/2 cups sugar, lemon juice and lemon rind together
- 3 Tbsp. CREAM corn starch
- 1 1/4 cup sugar
- 1/4 cup lemon juice
- 1/3 Tbsp. grated lemon rind
- 3 eggs separated
- 1 1/2 cups boiling water
- 1 9" baked pie shell
- 6 Tbsp. sugar

- 1/2 cup mayonnaise
- 1 1/2 teaspoons whole-grain mustard
- 1/2 teaspoon garlic powder

- 1/2 cup chopped cooked shrimp (about 1/4 pound)

- ◾2 cups all-purpose flour

- ◾1/2 cup (1 stick) plus 2/3 cup butter, divided

- YAKITORI SAUCE
- 2 tablespoons oil
- 2 whole shallots
- 1 teaspoon ginger, peeled and sliced
- 2 cloves garlic
- 1/2 cup sake
- 3/4 cup soy sauce
- 1/2 cup mirin
- 1/4 cup sugar
- CHICKEN
- 1 cup water
- 1/4 cup salt
- 8 chicken wings, wing tips removed
- Salt and pepper, to taste
- SCALLOPS or SHRIMP
- 4 sea scallops or shrimp, ( scallops cut in half)
- FILET MIGNON
- 4 ounces filet mignon, cut into cubes

Season the chicken with Creole seasoning
- 1 whole chicken, about 5 to 6 pounds, cut into 8 pieces
- 1 cup flour
- Creole seasoning, recipe follows
- 1 cup olive oil
- 2 cups chopped yellow onions
- Salt
- Crushed red pepper
- 1 pound shiitake mushrooms, cleaned, stemmed and sliced
- 2 tablespoons chopped garlic
- 1 cup dry white wine
- 2 cups chopped fresh tomatoes, peeled and seeded
- 1 cup tomato sauce
- 2 cups chicken stock
- 1 bay leaf
- 4 sprigs fresh thyme

- 1/2 pound cooked fettuccine or spaghetti (tossed in olive oil, salt and pepper)
