Dungeness Crab Pie with Braised Apples and Meyer Lemon Crème Fraîche

1. Combine flour and 1 teaspoon kosher salt in a food processor; pulse to combine
- Meyer Lemon Crème Fraîche:
- 1 2/3 cups all-purpose flour
- 1 1/2 teaspoons kosher salt, divided
- 2/3 cup cold butter, cubed
- 3 to 4 tablespoons cold water
- 1 tablespoon canola oil
- 1 leek, cleaned and minced
- 1/2 cup dry white wine
- 1 1/2 cups heavy whipping cream
- 3 large eggs
- 2 tablespoons fresh tarragon, minced
- 1/8 teaspoon freshly ground pepper
- 1/2 pound fresh Dungeness or Blue Crab meat, picked
- Braised Apples
- Yield: Makes 2 cups
- 2 tablespoons brown sugar
- 2 tablespoons maple syrup
- 2 tablespoons honey
- 4 Fuji apples, cored and cut into wedges
- 1 cup fruity red wine, such as Pinot Noir
- Ingredients
- 1 cup crème fraîche
- 1/2 teaspoon Meyer lemon zest
- 1 tablespoon Meyer lemon juice
- 1/8 teaspoon salt
- Pinch of freshly ground pepper
- Preparation
- Combine all ingredients in a mixing bowl; whisk until smooth.

- 1 quart fruit with its own juices
- 2/3 cups sugar
- 2 Tbls. flour
- 1/2 tsp. cinnamon
- 1 cup flour
- 2 Tbls. sugar
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/3 cup oil
- 3 Tbls. milk
- 1 egg
