- 1 8oz pkg shell macaroni
- 2 Tbls butter
- 1 Tbls all-purpose flour
- 1 cup milk
- 1 cup frozen peas
- 4 oz cheddar cheese, shredded
- 1/4 cup grated parmesan cheese
- 1/2 cup creamed cottage cheese

- Dipping sauces:
- 3 garlic cloves, finely chopped
- 1/3 cup freshly squeezed orange juice
- 4 tsp freshly squeezed lime juice
- 1 Tbls olive oil
- Salt
- 2 ripe avocados
- Hush Puppies:
- Vegetable oil for frying
- 2 ripe plantains, peeled and quartered
- 16 oz bag frozen corn, thawed
- 1 1/2 tsp baking powder
- Note: You can use bottled juices, but the freshly squeezed adds more flavor.
Smoky Cheddar Wraps

1.In a small bowl combine sugar, seasoning, paprika, chile pepper, and black pepper
- 2 Tbsp. raw sugar or 1 Tbsp. packed brown sugar
- 2 Tbsp. Old Bay seasoning
- 1/2 tsp. paprika
- 1/4 tsp. ground chipotle chile pepper
- 1/8 tsp. ground black pepper
- 1-1/2 lb. skinless boneless chicken breast halves
- 6 8-inch chipotle and chili pepper flour tortillas
- 1 6-oz. carton lowfat plain yogurt
- 1/4 cup light mayonnaise or salad dressing
- 2 Tbsp. cider vinegar
- 1 tsp. pure maple syrup
- 3 oz. baby romaine lettuce leaves (about 4 cups)
- 3 oz. smoked cheddar cheese, shredded (3/4 cup)
Hawaiian Chicken and Pineapple Skewers

Makes 14-16 skewers DIRECTIONS Mix remaining ingredients, except drained pineapple chunks, a large bowl
- 3 lbs boneless, skinless chicken thighs (could use chicken breasts, but thighs stay more moist)
- 1 cup soy sauce or coconut aminos
- 1 (15 oz) can of pineapple chunks in 100% juice, drained (reserve 1 cup of juice)
- 1 cup coconut milk
- 1/2 cup honey
- 1 bunch of green onions, chopped (optional, reserve some for garnish)
- 1/2 large white onion, chopped
- 4-5 cloves garlic, minced
- 1 (2-inch) chunk ginger, grated
- 1 tsp toasted sesame oil

I got this recipe many years ago from a friend in Ybor City, Florida
- 1 large onion, sliced
- 2 cloves garlic, finely chopped
- 2 Tbls vegetable oil
- 1 1/2 lbs. ground chuck
- 1 8oz can tomato sauce
- 1/4 cup dry red wine
- 1 large tomato, peeled and chopped
- 1/2 cup pimiento-stuffed green olives
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp cinnamon
- 1 tsp salt
- 1/4 tsp pepper
- 2 green peppers, seeded and sliced thin

- 4 large eggs, divided
- 18 1/4 oz yellow cake mix
- 1/2 cup buttermilk

Asparagus Mushroom Crustless Quiche

Butter two individual 5-inch pie plates
- 4 spears asparagus, trimmed and cut diagonally into 1-inch lengths
- 4 mushrooms, thinly sliced
- 1/2 tsp dried tarragon
- 6 large eggs
- 1/3 cup (80ml) half-and-half
- 2 oz (55g) 1/3 less fat Philadelphia cream cheese
- 1/3 cup (45g) Bisquick
- Salt and pepper
- 12 grape tomatoes, cut into halves
Olive Garden Zuppa Toscana

1. Cook sausage in a 300�F oven for approximately 30 minutes
- 1 lb Italian sausage (I like mild sausage)
- 2 large russet baking potatoes, sliced in half,and then in 1/4 inch slices
- 1 large onion, chopped
- 1/2 can oscar meyer bacon bit
- 2 cloves garlic, minced
- 2 cups kale or swiss chard, chopped
- 2 cans chicken broth
- 1 quart water
- 1 cup heavy whipping cream

- 3/4 cup chili sauce
- 1/4 cup brown sugar

- 1/4 cup cider vinegar
- 2 tsp grated orange peel
