Rum and Vanilla Bean Buttercream

In the bowl of an electric mixer fitted with the paddle attachment, beat butter until fluffy and pale
- 2 pounds (8 sticks) unsalted butter, softened
- 2 cups sugar
- 2 vanilla beans, halved lengthwise
- 1/8 teaspoon salt
- 10 large egg whites
- 2 teaspoons pure vanilla extract
- 3 tablespoons dark rum
Pork Chops with Apples

Juicy apples and cinnamons pair perfectly with pork and make an excellent winter meal
- 1 lb boneless thinly sliced pork chops
- 3 Tbls olive oil
- 1 large apple, peeled and cubed
- 1 cup apple juice plus 2 Tbls apple juice
- 1/3 cup raisins
- 3 Tbls brown sugar
- 1 Tbls freshly squeezed lemon juice
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 1 Tbls cornstarch
- 1/4 cup walnuts, toasted and coarsely chopped.
Curry Chicken

In 10-inch skillet, melt butter over medium heat
- 2 tablespoons butter
- 1 medium onion, chopped (1/2 cup)
- 1 package (14 oz) uncooked chicken breast strips for stir-fry
- 1 tablespoon curry powder
- 1 can (18 oz) Progresso™ Recipe Starters™ creamy roasted garlic with chicken stock cooking sauce
- 1/2 cup whipping cream
- 4 cups hot cooked basmati or regular white rice
- Cashew halves and pieces or chopped dry-roasted peanuts
- Cilantro leaves
Bavarian Creme Filling

- 2 Tablespoons unflavored gelatin
- 1/2 Cup cold water
- 4 egg yolks
- 1/2 Cup white sugar
- 1 pinch salt
- 2 Cups milk
- 1 teaspoon vanilla extract
- 2 Cups heavy cream
Slow Cooker Marmalade Curry Chicken

1. Season the chicken thights with salt and pepper, and place into a slow cooker
- 3 lbs skinless chicken thights
- salt and pepper, to taste
- 1 (12 ounce) jar orange marmalade 1/2 cup chicken stock
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon ground cayenne pepper
- 1 pinch ground ginger

Amaretto Mousse Filling

Put the sugar, butter, egg yolks, and Half & Half in a heavy, 2-quart saucepan over medium heat
- 1 cup sugar
- 1/2 cup Half & Half
- 4 eggs, separated
- 1/2 cup butter
- 1 pint heavy cream
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 2 tablespoons Amaretto
- 1 teaspoon almond extract
Chicken Stew with Olives and Carrots

This is a lightened-up version of chicken stew
- 1 1/2 lbs skinless, boneless chicken breast, cut into 3" pieces
- 1/4 cup all-purpose flour
- 2 Tbls olive oil
- 2 cups mushrooms, sliced
- 3 garlic cloves, peeled and chopped
- 1 1/2 cups chicken broth
- 1 16oz bag baby carrots
- 1 8oz can tomato sauce
- 1 small can kalamata olives, drained and coarsely chopped
- 1 1/2 tsps Italian seasoning
- salt and pepper

Penzey's Quick & Easy Cinnamon Rolls

The are actually called Grandma Moog's Q&E Cinnamon Rolls, I just wanted to shorten the title a little!
- Filling:
- 3 Cups flour
- 1/4 tsp. salt
- 4 tsp. baking powder
- 1/2 Cup sugar
- 2 eggs
- 2/3 Cup milk
- 1/2 tsp. pure vanilla extract
- 1/2 Cup butter or shortening–melted
- 1/2 Cup white sugar
- 1/4 Cup melted butter
- 1 1/2 tsp. cinnamon - the stronger the better
- Topping:
- 1/2 Cup brown sugar
- 1/2 Cup broken walnuts or pecans
- 3 TB melted butter
- Icing:
- 1 Cup powdered sugar
- 2 TB warm milk
- 1 TB melted butter
- 1/4 tsp. pure vanilla extract
