Spaghetti Sauce

Way better than jar sauce!!
- 1 lb ground beef
- 1 sm onion, chopped
- 2 garlic cloves, minced
- 2 cans (15 oz ea) tomato sauce
- 1 can (15 oz) diced tomatoes
- 1 Tbls olive oil
- 3 Tbls brown sugar
- salt & pepper to taste
Bacon & Cream Cheese stuffed Mushrooms

Using a soft mushroom brush or with a damp cloth, wipe mushrooms to rid of any grit or dirt
- 1 pound (20 to 24) button mushrooms
- 8 oz cream cheese, softened
- 4 strips bacon, finely chopped
- 2 small shallots, peeled and finely chopped
- 1 to 2 cloves garlic, peeled and minced
- 2 tablespoons green onions, chopped
- 2 oz blue cheese, crumbled
- 1 tablespoon dry sherry
- salt and pepper
Casbah Chicken

Serve this over rice, pasta or couscous
- 1 1/2 lbs chicken pieces, skinned and trimmed of excess fat
- 1 cup onion, chopped
- 1 cup carrot, chopped
- 1 cup mushrooms, sliced
- 1 cup celery, sliced thin
- 1 tsp salt
- 2 Tbls curry powder
- 1/4 tsp cayenne pepper
- 1 1/2 cups cooked garbonzo beans
- 1 1/2 cups tomato sauce
- 1/2 cup raisins
- 1 cup water
- 1/2 cup dry white wine

- 1/2 teaspoon coarse salt
- 1/2 pound good-quality milk chocolate, 4 ounces coarsely chopped and 4 ounces cut into 1/4-inch chunks
