Chocolate Trifle

Prepare brownie mix according to package directions and cool completely
- 1 (19.8 ounce) package brownie mix
- 1 (3.9 ounce) package instant chocolate pudding mix
- 1/2 cup water
- 1 (14 ounce) can sweetened condensed milk
- 1 (8 ounce) container frozen whipped topping, thawed
- 1 (12 ounce) container frozen whipped topping, thawed
- 1 (1.5 ounce) bar chocolate candy
Strawberry Cobbler Cake Recipe

Preheat the oven to 350 degrees F
- Dry ingredients:
- 1 heaping pint of fresh strawberries, washed, patted dry
- A sprinkle of lemon or lime juice
- 2 tablespoons organic sugar
- 2/3 cup Bob's Red Mill gluten-free cornmeal
- 1/3 cup organic buckwheat flour, millet flour, or brown rice flour
- 2/3 cup sorghum flour
- 2 teaspoons xanthan gum
- 1 teaspoon sea salt
- 1 1/2 teaspoons aluminum-free baking powder
- 1/2 teaspoon baking soda
- 2/3 cup organic light brown sugar, packed
- Pinch of nutmeg- just a hint
- 1/2 teaspoon ground cinnamon
- Wet ingredients:
- 1/4 cup light olive oil
- 1 cup hemp or rice milk, warm
- 1/2 teaspoon lemon juice or light tasting rice vinegar
- 3 tablespoons raw organic agave nectar or honey
- 2 teaspoons bourbon vanilla extract
- Egg replacer for 2 eggs- I used Ener-G Egg Replacer whisked with warm water
- Organic raw sugar for the top, if desired (it makes a lovely crunchy top)
Blueberry Cake Cupcakes Recipe

The flour blend as well as the kind of sugar you use will influence the flavors in these cupcakes
- Whisk together in a mixing bowl:
- 3/4 cup sorghum flour
- 3/4 cup rice flour
- 1/4 cup buckwheat flour or millet flour
- 1/2 cup tapioca or potato starch
- 1/2 teaspoon fine sea salt
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 2 teaspoons xanthan gum
- 1/2 teaspoon nutmeg
- 1 teaspoon very fine lemon zest- save the lemon for glaze, if you desire
- In a separate mixing bowl beat together:
- 2 large free-range eggs, beaten- or Ener-G egg replacer
- 1 cup organic light brown sugar
- 1/2 cup Spectrum Organic Shortening
- 1/2 cup warm non-dairy milk, more as needed
- 2 teaspoons bourbon vanilla extract
- 1 heaping cup fresh (or frozen unthawed organic blueberries).
Apple Crisp

- Filling Ingredients
- 5-6 (Empire or Granny Smith or whatever you like) apples, peeled, cored & sliced thinly
- 1 tsp. ground cinnamon
- 2 tbsp. granulated sugar
- Topping Ingredients
- 10 tablespoons unsalted butter, at room temperature
- 1 cup. granulated sugar
- 1 large egg, slightly beaten
- 2 tsp. vanilla extract
- 1 1/4 cup Bob’s Red Mill GF All Purpose Flour
- 1/2 teaspoon xanthan gum
- 1/4 cup Cream Hill Estates GF Rolled Oats
- 1 cup. chopped walnuts or pecans (optional)
Avocado-Feta Salsa

In a medium bowl combine tomatoes, avocado, onion, garlic, parsley, oregano, oil, and vinegar
- 2 plum tomatoes, chopped
- 1 avocado, halved, seeded, peeled, and chopped
- 1/4 cup finely chopped red onion
- 1 clove garlic, minced
- 1 Tbsp. snipped fresh parsley
- 1 Tbsp. snipped fresh oregano
- 1 Tbsp. olive oil
- 1 Tbsp. red or white wine vinegar
- 4 oz. feta cheese, coarsely crumbled
- Pita chips or tortilla chips
Greek Islands Salad

- 2 Tbsp lemon juice
- 1 Tbsp EVOO
- 1 garlic clove, minced
- 1/2 tsp dried oregano, crumbled
- 1/4 tsp pepper
- 3 cups torn romaine
- 1 large tomato cut into wedges
- 1 mini (Persian) cucumber, thinly sliced
- 1 red bell pepper, cut into strips
- 1/2 red onion, thinly sliced

Preheat oven to 500 degrees F and, if you have one, place a pizza stone on the bottom rack of the oven
- Basic pizza dough:
- 1/2 recipe basic pizza dough, recipe follows
- All-purpose flour, for dusting
- 1 tablespoon cornmeal
- 6 ounces mozzarella cheese, sliced
- 6 ounces Taleggio cheese, diced
- 1/2 teaspoon fresh oregano leaves
- Salt and freshly ground black pepper
- 2 tablespoons Parmigiano-Reggiano
- 2 tablespoons extra-virgin olive oil
- 1 package active dry yeast
- 1 cup warm water (110 degrees F)
- Pinch of sugar
- 1 1/2 teaspoons salt
- 1 1/2 tablespoons extra virgin olive oil, plus more for coating bowl
- 2 1/2 to 3 cups all-purpose flour plus more, if necessary
- Cornmeal, as necessary for dusting pizza peel

- 1 cup (2 stick) unsalted butter, cut into 1-inch pieces

- 2 large egg yolks
- 2/3 cup milk
- 2/3 cup water
- 2 1/2 teaspoons pure vanilla extract
- 2 2/3 cups all-purpose flour
- 1 1/3 cups cake flour
- 4 teaspoons baking powder
- 1/2 teaspoon fine salt
- Basic Glaze Icing:
- 3 (1 pound boxes) confectioners' sugar
- 1 cup water
- 5 tablespoons light corn syrup

Garlic Mashed Potatoes

Preheat oven to 350. Place the potatoes in a large pot of cold, salted water and bring to a boil
- 2 lbs Yukon Gold or Russet potatoes (about 4 medium potatoes) peeled and quartered
- 2-3 heads garlic
- 1/2 cup white puree
- 1/2 cup low fat plain yogurt (Greek works best)
- 2 tbsp evoo
- 1/2 tsp salt
- ground pepper to taste
