This recipe for Mexican Layered Salad is great for a make-ahead dish that looks beautiful in a glass bowl
- GARNISH:
- 1 (9 ounce) package cornbread mix, plus ingredients to make cornbread
- 1 (4 1/2 ounce) can chopped green chiles
- 1/2 cup light mayonnaise
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 head iceberg lettuce, shredded
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (11 ounce) can whole kernel corn, drained
- 1 (8 ounce) package reduced-fat Cheddar cheese, shredded
- 1 large red bell pepper, chopped
- 3 green onions, chopped
- 6 plum tomatoes, chopped
- Green onion curls

- CREAMY YOGURT DRESSING:
- 1 cup(s) Weight Watchers Plain Natural Nonfat Yogurt
- 1 Tbsp scallion(s), chopped
- 1/2 cup(s) English cucumber, peeled, chopped
- 1 tsp minced garlic
- 1/4 tsp kosher salt
- 1/8 tsp black pepper, or to taste
- 2 Tbsp mint leaves, fresh, chopped
- SALAD LAYERS:
- 1 small sweet red pepper(s), cut in strips
- 5 cup(s) romaine lettuce, chopped (divided)
- 1 cup(s) canned chickpeas, rinsed, drained
- 1 cup(s) red onion(s), sliced
- 1 cup(s) English cucumber, peeled, thinly sliced
- 1 cup(s) grape tomatoes, halved
- 2 Tbsp reduced-fat feta cheese, crumbled
- 8 medium olive(s), Kalamata, pitted, coarsely chopped

- 1/2 cup plus 2 tablespoons flour
- 1/2 teaspoon baking powder
- 1 pinch salt
- 1/2 teaspoon ground ginger
- 1/2 cup plus 2 teaspoons granulated sugar
- 7 tablespoons unsalted butter, at room temperature
- 2 large eggs plus 1 large egg yolk
- 3 tablespoons buttermilk
- 1 teaspoon pure vanilla extract
- 1 1/2 cups confectioners' sugar
- 1 tablespoon fresh lemon juice
- 3 tablespoons finely chopped candied ginger (can use crystallized ginger)
Nancy's Grilled Cumin Shrimp

- 3 T. lime juice
- 1 T. ground cumin
- 2 garlic cloves, minced
- 1 fresh jalapeno, stemmed

- APPLE LAYER:
- 6 c. peeled, sliced cooking apples
- 1 c. chopped walnuts *OPTIONAL*
- 1/2 c. firmly packed brown sugar
- 1 t. ground cinnamon
- COBBLER LAYER:
- 1 c. flour
- 1 c. sugar
- 1 t. baking powder
- 1/4 t. salt
- 1/4 t. ground ginger
- 1/2 c. half-and-half
- 1/2 c. butter, melted
- 1 egg, beaten
- 1/2 c. chopped walnuts *FOR TOPPING*
Meringue Cookies ('Forgotten Kisses')

"Leave me Alone" cookies. You heat oven, put cookies in, turn off and let sit overnight
- 2 large egg whites, room temperature, beaten
- 3/4 cup granulated sugar
- 1/2 t. vanilla extract
- 1 package (6-oz) semisweet chocolate chips (or finely-chopped semisweet chocolate)
- 1 cup finely chopped pecans

This colorful salad has something for everyone
- DRESSING:
- 1/3 cup(s) olive oil, extra virgin
- 1/4 cup(s) fresh lemon juice
- 1 tsp dried oregano
- 1 Tbsp Dijon mustard
- 1/2 tsp table salt
- 1/4 tsp black pepper
- 2 medium garlic clove(s), minced
- SALAD:
- 4 oz uncooked whole-wheat pasta, corkscrew shape (or any preferred shape; about 1 1/2 cups)
- 2 1/2 oz olive(s), canned, sliced, black (about 10 medium olives)
- 1 medium green pepper(s), chopped (about 1 cup)
- 1 medium sweet red pepper(s), chopped (about 1 cup)
- 3/4 cup(s) grape tomatoes, or other small tomatoes, halved (about 10 tomatoes)
- 1 medium yellow summer squash, halved lengthwise and sliced (about 1/2 cup)
- 1 medium zucchini, halved lengthwise and sliced (about 1/2 cup)
- 1 cup(s) frozen green peas, thawed
- NOTE: Using bottled dressing instead could affect points value.
Pumpkin Cookies

This is a very soft cake-like cookie
- FROSTING:
- 1 C shortening (I like butter better....)
- 1 C sugar
- 1 egg
- 1 C canned pumpkin
- 1 tsp vanilla
- 2 C all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 C chopped nuts
- 1 C chopped dates
- 1 C raisins (I like golden)
- 3 Tbsp butter
- 1/2 C brown sugar
- 4 Tbsp milk
- 1 C powdered sugar
- 1 tsp vanilla.
Mom's Oyster Crackers

My mom has been making these seasoned crackers for years
- 10-oz package oyster crackers
- 1/2 t. dill weed
- 1/2 t. garlic powder
- 1/2 t. lemon pepper
- 1 pkg. dry mix - Original Hidden Valley ranch salad dressing
- 3/4 c. oil
Chipotle Pulled Pork

Pulled pork, crock pot, chipotle
- 1 (3 pound) Boston pork butt roast
- NOTE: Can substitute two pork tenderloins or a london broil
- 1 t. cumin
- 1/2 t. seasoned salt
- Salt and pepper to taste
- 2 T. vegetable oil
- 1 (15 oz) can Mexican-style tomatoes
- 1 envelope taco seasoning mix
- 1 (7 oz) can chipotle chiles in Adobo sauce (only use one or two of the chiles)
- 2-3 T. cornstarch
- 1 (8 oz) can jumbo corn muffin biscuits
