Cuisine at Home Parmesan-Crusted Chicken

Possibly the best chicken I ever had
- CHICKEN:
- 2 boneless, skinless chicken breast halves
- 2 egg whites
- 2 tsp cornstarch
- Juice of 1/2 lemon
- CRUST:
- 1 cup coarse dry bread crumbs (best if
- freshly made)
- 1 Tablespoon chopped fresh parsley
- 1/2 cup grated parmesan cheese
- 1 tsp kosher salt
- 1/4 tsp ground black pepper
- Zest of 1 lemon, minced
- TO SAUTE CHICKEN:
- 3 Tablespoons olive oil
- (see directions for optional Sage-Butter Sauce)
Claire's Spinach Salad

This salad is as pretty as it is delicious
- DRESSING:
- 2 cans mandarin oranges, drained
- 1/2 pound bacon, cooked and crumbled
- 1/2 c. toasted slivered almonds
- 1 red onion, cut in thin rings
- 2 heads greens (spinach, red leaf lettuce –or can do all spinach)
- 8 oz. sliced mushrooms
- 2 hard boiled eggs, grated
- 1 t. dry mustard
- 1 t. fresh pepper
- 2/3 c. sugar (I use a little less)
- 5 T. vinegar
- 1 t. lemon juice
- 5 T. honey
- 1 t. grated onion
- 1/4 t. salt
- 1 t. celery seed
- 1 c. canola oil

- Crepes:
- 1 cup flour
- 3 eggs
- 1 tsp salt
- 1 1/2 cups milk
- 3 tbsp butter melted and cooled
- Salmon Layer:
- 1 can salmon
- 1/4 cup mayo
- 1 tbsp chopped chives
- pepper to taste
- Cream Cheese Layer:
- 6 oz cream cheese (3/4 of an 8oz package - did I need to say that?)
- 2 tbsp mayo
- 4 slices bacon crumbled
Pumpkin Ice Cream Pie

- Butter Crunch Crust:
- 1/2 c. butter
- 1/4 c. brown sugar
- 1 c. sifted flour
- 1/2 c. chopped pecans
- Pumpkin Filling:
- 1 c. canned pumpkin
- 1/2 c. brown sugar
- 1/2 t. salt
- 1 t. cinnamon
- 1/4 t. ginger
- 1/2 t. nutmeg
- 1 quart vanilla ice cream, softened
Cheddar Olives

When planning a cocktail party, always make sure to have one "straight-from-freezer-to-oven" recipe, and make extra
- an 8 to 10 ounce jar of pitted green olives, either pimento stuffed or plain.
- 1 cup sharp Cheddar, shredded
- 2 tablespoons unsalted butter, softened
- 1/2 cup all purpose flour
- 1/8 teaspoon cayenne OR 1/8 teaspoon smoked paprika or freshly grated black pepper to taste
- *We prefer the cayenne, but in a pinch we've made it with the paprika and it was good as well! You just want a little something in there to cut the richness.

Mama's Buttermilk Pancakes

- 1 t. salt
- 2 T. sugar
- 2 T. vegetable or canola oil
- 1 t. soda
- 1 cup buttermilk
- Enough sifted flour to make a thin batter (1/2 to 1 cup)
Old-Fashioned Meat Loaf

My favorite meat loaf recipe
- 2 c. finely chopped onion
- 1 T. minced garlic
- 1 celery rib, chopped fine
- 1 carrot, chopped fine
- 1/2 c. finely chopped scallion
- 2 T. unsalted butter
- 2 t. salt
- 1-1/2 t. freshly ground black pepper
- 2 t. Worcestershire sauce
- 2/3 c. ketchup *divided*
- 1-1/2 pounds ground chuck
- 3/4 pound ground pork'
- 1 c. fresh bread crumbs (can substitute panko)
- 2 large eggs, beaten lightly
- 1/3 c. minced fresh parsley leaves
Dark Chocolate Ginger Crinkles (Rachael Ray)

- 4 ounces unsweetened chocolate, chopped (about 1/2 cup)
- 1 3/4 cups granulated sugar

- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt

- 3/4 cup candied (or crystallized) ginger, finely chopped
