Possibly the best chicken I ever had

  • CHICKEN:
  • 2 boneless, skinless chicken breast halves
  • 2 egg whites
  • 2 tsp cornstarch
  • Juice of 1/2 lemon
  • CRUST:
  • 1 cup coarse dry bread crumbs (best if
  • freshly made)
  • 1 Tablespoon chopped fresh parsley
  • 1/2 cup grated parmesan cheese
  • 1 tsp kosher salt
  • 1/4 tsp ground black pepper
  • Zest of 1 lemon, minced
  • TO SAUTE CHICKEN:
  • 3 Tablespoons olive oil
  • (see directions for optional Sage-Butter Sauce)

  • DRESSING:
  • 2 cans mandarin oranges, drained
  • 1/2 pound bacon, cooked and crumbled
  • 1/2 c. toasted slivered almonds
  • 1 red onion, cut in thin rings
  • 2 heads greens (spinach, red leaf lettuce –or can do all spinach)
  • 8 oz. sliced mushrooms
  • 2 hard boiled eggs, grated
  • 1 t. dry mustard
  • 1 t. fresh pepper
  • 2/3 c. sugar (I use a little less)
  • 5 T. vinegar
  • 1 t. lemon juice
  • 5 T. honey
  • 1 t. grated onion
  • 1/4 t. salt
  • 1 t. celery seed
  • 1 c. canola oil

  • an 8 to 10 ounce jar of pitted green olives, either pimento stuffed or plain.
  • 1 cup sharp Cheddar, shredded
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup all purpose flour
  • 1/8 teaspoon cayenne OR 1/8 teaspoon smoked paprika or freshly grated black pepper to taste
  • *We prefer the cayenne, but in a pinch we've made it with the paprika and it was good as well! You just want a little something in there to cut the richness.
