Prime Rib with Fresh Garlic and Rosemary

This is a make-ahead recipe
- 1 (5-pound) boneless beef rib roast (bone optional)
- 3 T. Montreal Steak Seasoning
- 1 T. fresh rosemary, chopped
- 10 garlic cloves
Chicken Piccata (Quick)

This is a quick and easy version of Chicken Piccata
- 1 t. seasoned salt
- 1/4 c. flour
- 1-1/2 pounds chicken breast cutlets
- 2 T. butter
- 1 T. capers
- 2 T. fresh lemon juice (and a few thin slices of the lemon
- 1/4 c. white wine (Chardonnay or Sauvignon Blanc are good choices)
Panzanella (Ina Garten)

- VINAIGRETTE:
- 3 T. good olive oil
- 1 small French bread (ciabatta also good), cut into 1-inch cubes (6 cups)
- 1 t. kosher salt
- 2 large, ripe tomatoes, cut into 1-inch cubes
- 1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick
- 1 red bell pepper, seeded and cut into 1-inch cubes
- 1 yellow bell pepper, seeded and cut into 1-inch cubes
- 1/2 red onion, cut in half/thinly sliced
- 20 large basil leaves, coarsely chopped
- 3 T. capers, drained

- 1 t. finely minced garlic
- 1/2 t. Dijon mustard
- 3 T. Champagne (or white wine) vinegar
- 1/2 c. good olive oil
- 1/2 t. kosher salt
- 1/4 t. freshly ground black pepper
Roasted Banana Bars with Browned Butter–Pecan Frosting

This recipe is a great way to use ripe, speckled bananas
- BARS:
- 2 cups sliced ripe banana (about 3 medium)
- 1/3 cup packed dark brown sugar
- 1 T. butter, chilled and cut into small pieces
- 9 ounces cake flour (about 2 1/4 cups)
- 3/4 t. baking soda
- 1/2 t. baking powder
- 1/4 c. nonfat buttermilk
- 1 t. vanilla extract
- 1/2 c. butter, softened
- 1 1/4 c. granulated sugar
- 2 large eggs
- Baking spray with flour

- FROSTING:
- 1/4 c. butter
- 2 c. powdered sugar
- 1/3 c, (3 ounces) 1/3-less-fat cream cheese, softened
- 1 t. vanilla extract
- 1/4 c. chopped pecans, toasted
