Nancy's Grilled Cumin Shrimp
Easy to make, can prepare ahead, and always a hit! Great served with black bean salad!
- 1/4 c. olive oil
- 3 T. lime juice
- 1 T. ground cumin
- 2 garlic cloves, minced
- 1 fresh jalapeno, stemmed
- 1/2 t. salt
- 1 to 1 -1/2# large shrimp, shelled
In a blender or food processor, combine everything except shrimp. Process until smooth.
In a large bowl, combine puree with the shrimp and marinate at least four hours (or cover and refrigerate overnight).
Bring to room temperature before grilling.
To grill, thread the shrimp on skewers, fitting them close together. Smear any remaining marinade over the shrimp. Cover the grill and cook, turning once, until they are just done - 4 to 5 minutes.
