- 1/2 cup(s) dried cranberries, sweetened
- 11 oz canned mandarin oranges in light syrup, drained
- 1/2 cup(s) chopped walnuts
- 2 medium scallion(s), chopped
- 2 Tbsp vinegar, preferably sherry vinegar
- 2 tsp olive oil
- 1/2 tsp table salt
- 1/4 tsp black pepper, ground
Chipotle Meatloaf

This is a Weight Watchers recipe that I adapted a little due to our love of chipotle peppers
- 1 spray cooking spray
- _________________
- 1 1/2 pounds lean ground beef (with 7% fat)
- 1/2 cup rolled oats
- 1 medium onion, finely chopped
- 1/2 cup shredded carrots
- 2 cloves garlic, minced
- 4 oz canned green chili peppers, mild, diced
- 1 large egg
- 1 1/2 t. chipotle chili powder
- 2 tsp ground cumin
- 8 oz canned tomato sauce, divided
- 1 can chipotle peppers in adobo (use all the sauce and only one-half to one of the peppers, minced -they're hot!)
Broccoli Cheddar Penne

This was my son's favorite meal for years
- 1/4 c. olive oil (DIVIDED)
- 1/4 c. pine nuts
- 1 pkg (10-oz) frozen chopped broccoli, thawed and drained
- 2 large cloves garlic, minced
- 1/2 c. water
- 2 chicken flavored bouillon cubes
- Dash ground red pepper
- 2 t. basil
- 1 t. salt
- 1/2 t. black pepper
- 2 c. shredded Cheddar
- 8 oz (1/2 pkg) Penne, cooked and drained
Hot Spiced Cider

- 2 (2-qt) bottles apple cider
- 1/4 to 1/2 c. brown sugar (to taste)
- 1 T. whole allspice berries
- 1 T. whole cloves
- 3-4 whole cinnamon sticks
- Fresh strips of lemon peel
- 1/2 of an orange
- 1/4 t. salt
- Fresh grated nutmeg

- 6 c. fresh rapsberries
- Confectioners' sugar for dusting
- Tips & Techniques
- Sanding sugar can be found in the baking aisle of some supermarkets, or in specialty stores where cake-decorating supplies are sold.
- Lemon curd will be found on same aisle.
- Wonton wrappers are usually in produce section with the oriental vegetables.
Crispy Chipotle Potato Skins

I adapted this Weight Watchers recipe to include cilantro and fresh lime juice
- 4 large baking-variety potatoes cooked, quartered
- 1 1/2 tablespoons olive oil
- 1 teaspoon chipotle chili powder)
- 1/4 teaspoon hot pepper sauce
- 3 slices cooked Canadian-style bacon finely chopped
- 1/2 cup Kraft Free Shredded Cheddar Cheese or other brand
- 3/4 c. fat free sour cream (optional)
- 2 medium tomatoes diced
- 3 medium scallions finely chopped
- Lime wedges
- Cilantro

- 1/2 cup butter or margarine melted
- 1/3 cup sugar
- 6 large eggs
- 1 1/2 cup sour cream
- 1/2 cup orange juice

- 1 (8 oz) package cream cheese, softened

Asian Broccoli Slaw (with Sriracha!)

Came across this in my hunt for Sriracha recipes (hot chili sauce -found in the Chinese section of grocery store)
- For the sauce:
- 2 Tbsp hoisin sauce
- 2 Tbsp reduced-sodium soy sauce
- 1 Tbsp agave nectar (can substitute honey)
- 1 tsp Sriracha, or more to taste
- 1 tsp rice wine vinegar
- Juice of 1 small lime
- For the slaw:
- 1 *1 cup shredded broccoli stems, blanched and rinsed under cold water
- 1 *1 cup shredded carrot
- 1 *1 cup shredded red cabbage
